not really baking but worth trying, infuse vodka with a coffee bean, we used the african mist from tobys estate cause of its floral flavors, along with vinilla bean and some cardomon pods

serve on ice

I make these at work - in theory they are supposed to be put out with coffee and some of our desserts, but I'm not sure that many of them make it to the customers......

Espresso Biscotti

3 tblspns ground coffee
40ml espresso
125g butter
180g sugar
2 eggs
270 g plain flour
1 1/2 tspn baking powder
pinch salt
3/4 cup chocolate chips, almonds or walnuts (optional)

Preheat oven to 170 C.  Mix ground coffee with espresso, stand.  Cream butter and sugar, beat in eggs and coffee mix.  Stir in flour, baking powder and salt.  Fold in chocolate chips or nuts if using.  Shape into two equal logs 35 cm x 5 cm, about 1.5 cm high, on baking paper or greased tray (easiest done with wet hands).  Bake 25 minutes until lightly browned, cool 5 mins.  Cut into slices using a bread knife (and no pressure, let the knife do the work).  Rebake slices at 160C until dry, approx 10 minutes.

They'll keep for a long time, although again we haven't been able to test this out.

The basic butter cake variation at the beginning of the thread is interesting. I did another one with a mild bean the other day. This seemed to come out a little in the cake. Previously I used a Columbian that was fairly strong.

I would have though that after letting the coffee sit to cool for so long and then baking, I would lose all but the characteristic "coffee"-ness. Maybe I am imagining things.

Anyway, great recipe.

Grendel, use granita biscuits for smores.

Saw this on Nigella over xmas - and changed it around a bit

Mocha banana smoothie
1 shot of espresso (she used instant)
1 banana
1 - 2 ts cocoa
sugar to taste
300 - 400ml mik
Ice

Whizz al in a blender and drink straight away

With winter coming up, this recipe is the best! Have had this since I was a kid as a chocolate only pudding, but is extra nice with the addition of coffee and the use of great cocoa! Is a pretty cheap dessert made from things you probably already have around the house. You can also substitute milk for soy, and butter for nuttelex if you have dairy intolerance, or use the low fat versions if it makes you feel better. Still tastes great!

Pudding
1 1/2 cups self raising flour
1 tablespoon Red African Cocoa
2/3 cup sugar
1 egg
2 tablespoons butter, melted
1 cup milk (using a latte is also good)

Sauce
2 tablespoons Red African Cocoa
1/2 cup extra sugar
double espresso shot (60ml)
1 cup boiling water

Preheat oven to moderate (180°C or 350°F)
Sift flour and cocoa into a large bowl, stir in sugar and make a well in the centre.
Whisk egg, butter and milk together, and pour onto dry ingredients.
Stir gently until just combined, but don’t beat vigorously or the pudding will be tough. Spread pudding mix into a 2 litre (8 cup) capacity ovenproof dish.
To make the sauce, dissolve cocoa and sugar in the coffee and boiling water, then pour this onto pudding mix gently.
It's wierd at first to pour this liquid over the pudding mix, but you'll see just how well it works!
Bake for 40 minutes or until a knife comes out clean when inserted into the pudding (not through to the sauce at the bottom).

Serve with custard and/or ice cream

OMG I love this thread!  Grin

Here is a muffin recipe.  I like muffins because they're quick, the flour doesn't need sieving, and they are best if only just mixed (a few lumps of flour doesn't matter).

Coffee Date Muffins
1 cup dates chopped
2/3 cup coffee (the stronger the better)
1/2 tsp cinnamon
2/3 cup butter
1 cup brown sugar
2 eggs
1 1/2 cups plain flour
1 tsp baking powder
1/2 tsp bicarb soda
1/2 tsp salt

Combine dates, cinnamon & coffee and let stand 20mins to soften dates.
Cream butter, sugar, and add 1 egg at a time and beat

Add date mix.
Mix dry ingredients together & add, stirring just to moisten

Bake 180 c 20mins
Yields about 10 muffins.

Use Red African cocoa in the standard Chocolate Crackle recipe, add some chopped glace cherries, spread onto a foil lined tray and you get an "Adults" Cherry Ripe Slice CheesyYummy Cheesy

OK - an Aussie favourite with a touch of "Kes Magic." I have made coffee damper on several occasions.  Damper?  Flour and water and bake over a campfire.  In my case I have added a cup of coffee to the mix - your choice of bean and strength etc.  Simple? Very!  Tasty? Better than plain damper!

Here's one for you that I've done a number of times.

Fillet of Venison (Mandagery creek if you can get it otherwise the NZ stuff is also very good)

Coarsely ground coffee
Dark Chocolate
1 Bottle Pinot Noir

Roll the fillet in the coffee grounds, wrap in cling film and refrigerate for 8 hours

Using a cast iron pan on high heat sear the outsides of the fillet turning relatively quickly and then just bank the pan into an oven at say 150 for 10 or so minutes (depends on the thickness of the fillet)

melt about 100 grams of chocolate in a double boiler (or a microwave if you must) and add about 100 mls of Pinot Noir. Drink the rest of the Pinot.

Slice the fillet and serve with your favourite buttery potato dish, spoon over the chocolate sauce.

How did you go pulling coffees?

If ya can do it for 50...  Then ya can do it for 10 plus a few judges.

Would be an interesting thread on CS.  We would be supporting our own CS entrant but have state biases....  Grin

NOTE: You have to do it in your suit...  Understand the culture; you would have access to different styles and ya could even get ya work mates to support you..  Maybe a catering trip OS  Wink

Entering next seasons My Kitchen Rules is an idea that we MAY entertain after we find out some details on time requirements etc

Last night went off with a blast! loved it and the client was very happy with everything.....

Now for that panna cotta recipe,

Vanilla Panna Cotter over Caramelized espresso:

Serves 4

Ingredients
60ml freshly extracted espresso(i used 2 x double restretto's)
1/4 cup sugar


1 Cup Cream(not thickened)
1/4 Cup Caster Sugar
1/2 Vanilla bean(i used vanilla bean paste - 1/2 teaspoon)
250g Phili softened
1 teaspoon gelatine disolved in 1 tablespoon of boiling water

1. Combine espresso and sugar in a small saucepan and stir until sugar is dissolved. Simmer for 3-4 mins or until thick and syrupy - be careful not to go too far (my first experiment i simmered too long and it turned to toffee, yummy toffee but!) Pour into 4 espresson glasses and allow to cool in the fridge....

2.Heat the cream, caster sugar and vanilla bean in a saucepan until almost boiling(DO NOT ALLOW TO BOIL!!!!)Remove from heat and allow to cool

3. Beat the Philly with an electric mixer until light and fluffy then gradually beat in the cream mixture and gelatine.

4 Spoon or pour the philly mixture on top of the espresso in the glasses till full and chuck em in the fridge for a few hours.

Note, when you pour the philly into the glasses, the espresso should be thick enough to support the philly......


Serve with a spoon and enjoy Cheesy

We do this as a roast.....it is awesome!........

1 cup of VERY coarse ground coffee (very course)
1/8 cup coarse ground peppercorns......

Mix coffee and pepper together, lay the coffee/peppercorn mix out on a piece of baking paper, coat the chunk of meat with olive oil,, roll the meat around in the mix as to completely cover.....seal off in a very hot frypan, roast in oven till cooked to your liking! i like ours medium rare!



SO GOOD!

Maybe I'd be of a different opinion after 650ml of Pinot.


Thundergod, you cant go wrong with a nice Pinot from the Mornington peninsula like the Eldridge Estate Pinot, elegant and smooth, great on a cold wet Victorian day, although i,ve forgotten what rain looks like here in WA, does it look like the stuff that comes out of the tap? Undecided
