Just had my first try of this one tonight 2 days post roast, lovely nutty citrus flavours, quite a bit bolder and full flavoured than other Nicaraguan beans i've had


I think this one is a ripper of a bean even roasted in something simple as a popper I can tell it's something quite special

Nicaragua Cima del Cielo CoE -- just roasted 600g first crack 11.50 196C slowed it down 2C per min for four mins and then pulled cs7/8 lovely even roast.
1 hour later I couldn't resist so brewed 16g 250ml for 3mins in coffee dripper--produced a wonderul crisp clean cup with citrus notes and delicate acidity, smooth buttery mouthfeel and lovely lingering aftertaste.
this one will be secreted at the back of the cupboard for sure.!!!! Wink Wink

Nicaragua Cima del Cielo CoE

Roasted to a rolling second crack @ CS 8/9
first crack 9.15 min/sec, second crack 14.40 min/sec RSC 15.30 min/sec
Light oil sheen observed at day 4 of degas

Espresso
It pours like liquid amber
Full body thick mouth feel
Chocolate to caramel syrup like taste
Light chocolate after-taste
No funky taste of the crema

Also recommended for milk drinks
All the above flavours are sweeter and every bit as nice

It goes down very nice indeed
This coffee is truly a nice drop mmmmmmm

Recommend you try it as it wont disappoint

I roasted some of this last week with the intention of using it in the clever coffee dripper. But, no good unfortunately.
Roast profile went something like this - drop 150c - ramp 15c/permin to first crack@9min 203c - rolled for another minute and then pulled.
Flavours and acidity were muted and there was no distinct aroma.
I found this info http://www.bootcoffee.com/ROAST3.pdfo  on bootcoffee, so i might try again today using some of their guidlines and see what i can come up with.
What do you think guys, roast  this bean gently at the beginning with a moderate 13c per min ramp to first crack back off to a 2c per min ramp and pull ???

Roasted a small batch tonight and can't wait to try, given the feedback above.

first crack @ 9mins, pulled start of second crack @ 15mins - as you say greenman, very even bean to roast and lovely hazelnut colour. Must resist and leave alone for a few days!
