Peru Ceja de Selva/Kenyan AAA Bold Blend
Have started brewing a 60/40 Peru Ceja de Selva/Kenyan AAA Bold blend--roast:-1800g, charge temp 180C. first crack at 13.00min. 199C. Coasted from start of first crack to 213C over 2minutes and then rapid cooling before start of second crack. Nice even roast. Rested for 5 days.
Dialled the blend in today and extracted a double espresso 20g in 18g VST, brew temp 93C, yielded 51.5g in 25seconds.
Produced a super tasty espresso, great looking crema, nice green apple acidity, bitter sweet cocoa notes, visous with a lingering mouthfeel. Tasted great as flat white in 170m tulip cup.
Sounds wonderful 'gm'...
