    Question 21g portafilters/ how much to dose?

    Hi guys,

    First time doing a post after reading a lot what people have written. I was wondering if anyone can help me with this question.
    I bought a 21g portafilter the other day but I have to dose a minimum of 27g to not let the puck become sloppy and wet.
    I had a 18g before but was doing around the 21g mark.

    27g seems like a lot of coffee but i am starting to think its the machine- Astoria Forma, compared to the La Marzoccos which had 21g baskets and dosing 24g.

    Have you done a 5c coin test?
    What happens when you dose less and grind finer to suit?

    Not yet, Ill give that a go tomorrow. When I dose less, I feel as if the pour is inconsistent (slow at start then faster and faster) and a finer grind gives me 'balls' in my grind.
    Just to make sure, I should have a small indentation of the 5c after extracting right? I am currently getting a small indentation of the shower screen screw in my puck.
    Does 27g seem a bit too much? Costing around 80c for the double shot right now.

    Wow - seems like you're over-dosing. Shower screen indentation is the giveaway.

    With a typical 21g basket you should expect to dose 21-24g I would suggest.

    Exactly what I thought. Thats why I put the machine name as well (Astoria Forma).
    Had the technician in when I used to use a 18g basket and he could only do a 21g dose as well. Anything less becomes watery and inconsistent leaving me with a watery puck.
    Had no problem of overdosing on an Expobar or a La Marzocoo.

    The 5c test doesn't include pulling a shot with the coin in there, you dose and tamp as per usual and then insert the portafilter as if you were pulling a shot, but don't, then remove it and see if the top of the puck has any marks on it from anything (you may need to wipe the shower screen with a cloth before inserting the portafilter to get rid of any residual drips before inserting so they don't make it wet). If there is any marks from the shower screen or bolt etc then you are dosing too much.
    Then gently place a 5c on top of the coffee in the middle of the portafilter. Insert the portafilter, then remove it again and see if it left an indentation on the puck.you should get an indentation from the 5c coin and nothing else.
    If you only get a mark from the 5c coin then you are within the ballpark of the right dose. That's not to say you can't make a good coffee with a lower dose though, taste is everything.

    Don't worry if you're getting indentations from the shower screen after you've pulled a shot, the puck expands once the shot stops and the pressure reduces (this can be seen in videos of people using glass portafilters). It only really matters of it leaves indentations before you've pulled a shot.

    Also the "balls" in your grind might just be what your grinder does when you get that fine, it doesn't mean you don't need to grind that fine. What grinder are you using? Until recently I was using a Breville Smart Grinder which would leave clumps like in the photo below. I would attack them with a toothpick before tamping. Are the balls hard like bricks or just softly clumped together? If they're soft and fall apart easily there's nothing to worry about. If they're hard then they need to be broken up.

    I am using a Mazzer Super Jolly for my grinder. I can't find any concrete procedure regarding how much coffee to dose for specific sized portafiters. Ive worked at some places where they ask you to overdose the portafilter and some who want the specific size to weight, ie 18g basket has 18g coffee. Guessing that both are fine as coffee is so subjective. But since i am looking at the actual cost to make a coffee, I am trying to weigh out the pros and cons while trying to save a little $$

    You were overdosing an 18g basket, then bought a 21g basket?

    Experiment with grind fineness and dose weights. Keep notes so you know what works and what doesn't. Purge your grinder thoroughly when changing fineness

    Yeah only reason going to the 21g basket was that a I was told a lot of the machines going into stores now are stock 21g baskets while 2 years ago was 18g stock. Gotta keep up with the ever changing coffee standards!

    Was something wrong with your coffee dosing 21g into an 18g basket? If it ain't broke...

    What is your machine's delivery pressure at the Group during a shot?
    If it is excessive, it may account for the peculiarly high doses required...
