Dissolving instant coffee vs throwing away grounds in machines/percolators etc

I am just about to roast my first ever batch of coffee and I've been thinking about how I'm going to drink it. Being an instant coffee drinker for most of my life, I don't at all understand why people are throwing away coffee grounds when they use machines or percolators or what have you, to make their coffee. Is there a specific reason why these methods don't 'use up' the coffee grounds like instant coffee does? Can't you just put a teaspoon of freshly grounded coffee beans in a cup and dissolve like you would with instant coffee?

Short version - instant has a lot of the coffee chemicals removed, and at least 90% of them add some chemicals to their concoctions. End result - whatever is left dissolves fully.

Real coffee still has the cell structures intact (think cellulose and fibres, amongst many others) so there will always be some residual.

Don't believe me - do the "small room test" - make up an instant in a small room, close all openings and then try to reenter the room after ten minutes without throwing up. Then do the same with a quality espresso.

The instant coffee is already the extracted liquid, where you're extracting the liquid in the fresh ground coffee methods.

only 28-35% of coffee is water-soluble. that's why you'll why you'll always end up with spent grounds.
