After being to Italy on a number of occassions over the last 10 years, some say I've become a real fussy coffee bugger as I've adhered to the traditional Italian way of thinking in regards to coffee.
In my world, coffee is meant to be simple, consistant, not too fancy, not too many options, but most importantly always must be of a very good quality.
For me, real coffee is,
- espresso, regular or ristretto
- cafe e latte
Nothing more nothing less.

In my world to really test a barista, get them to make an espresso as it will either be liquid gold or poison as it can't be disguised by the milk.
I do appreciate the skills required to create good latte art as long as the heart of the coffee (the espresso shot) is not compromized.
