50/\/50 of each. The deep raisin notes of the Sulawesi balances out the high acidity of the Tanzanian bean, allowing the citrus and chocolate notes to shine. The result is a rich bittersweet cocoa blend with prominent orange notes, similar to a Terrys Chocolate orange in character. The back end of the palate is a pleasant spicy dried fruit richness that lingers in milk. One of my favourite blends. Both beans pulled just prior to second crack and consumed 10 days post roast. No point in tasting it sooner as the Tanzanian is all acidity before 10 days.
