OK so in the quest for the best (haha Im a poet...) Ive heard you guys mention temp surfing to get the right temp out of non-HX and some cheaper machines.

After using my Breville a couple of times I notice a pour without the group attached produces a bit of steam as well. Does this mean its too hot? I ran a pour for 10s and the steam remained. How do I tell what the temp is like without getting a temp sensor? The coffee might be slightly bitter but I have a bit of a mixed grind size thanks to the grinder...
