Need help with Saeco Via Venezia
Our Via Venezia (great machine)is used once daily. It has been descaled and tuned up. Our issue persists: When we turn the machine on, we run water through the steam wand and wait for the indicator light to come on. If we do not immediately run the shots of coffee, the indicator light will go off and the boiler has turned the water to steam. We use the steam wand to get water running again, and the light will come on and we can draw the shots. What can we do to not have it go directly to steam every time? Is this a thermostat issue or a boiler issue? Husband is great fix it guy and will jump in, but we need a little roadmap to understand what is happening here.
In the US the Starbucks Barista is a 110V rebranded Saeco Via Venezia. The newer version Saeco Via Venezia with the round silver buttons is basically the same as the earlier toggle switch version.

"Coffee Machine Parts" does spares for this machine. Select early or late model.
The issue does sound like a brew thermostat issue (95 deg C thermostat).
Use thermal paste between thermostat and boiler if replacing thermostat for more accurate heat transfer.
You're getting steam so doesn't sound like a boiler/heating element issue.
