Which PID to use for Rancilio Silvia?

Gene Cafe Coffee Roaster $850 - Free Beans Free Freight
Went for a bit of a scrounge in the garage on the weekend and turned up a pair of PIDs i bought when i was previously brewing beer and proving sourdough. The PIDs are now unused after i switched to an all in one controller for both the heater and cooler for the unit.

One of the PIDs is the relatively standard one which ive seen used by several PID installs in the past. Looks like this:

The second PID is much smaller, and looks more like the ones used in the Jetblack kits:

Functionality both are pretty similar. The Dual display allows for a NO or NC relay, not that it changes anything really. I was hoping that the dual display one would also have dual settings and dual outputs so i could use it for steaming as well, but alas it doesnt.

Any thoughts on which one i should use?

    I would use dual display.
you can use the alarm out to control steam.
I removed the relays from mine and wire the relay drive to control external SSR.

I already have a few SSRs around from the brewing and proving projects so I was just going to use those. How would I use the alarm for steaming? Just turn off the element when it gets up to temp?

Fyi the dual display one is identical to the one I use in my gaggia classic (sestos D1-S). If you have any problems let me know.
