Question when temperature surfing on Rancilio Silvia

Gene Cafe Coffee Roaster $850 - Free Beans Free Freight
    Hey guys,

Had my (2nd hand) Silvia for a month or so now. Getting pretty efficient at pulling some decent espresso shots - just had once question when temperature surfing.

I generally pull my shot at 45 secs, but im curious - some instructions dont mention it, should I be locking my portafilter in at the start of my 45 sec countdown, or lock it in as close to 45 secs. My friend who has worked at various cafes suggests locking in the portafilter earlier results in burning the coffee.

Sorry if a previous topic has discussed this.

If its only a matter of 1-2 seconds before hitting the brew button I doubt that would result in burnt coffee. I guess you could always try a blind taste to see if you can pick the difference.

I guess I will just test that theory. But you wouldnt recommend immediately locking in the pf just as I start to countdown? It is likely to burn a little if locked in for like 30-40 secs?

    Hi Daniel,

The easiest way is to wait for the light to go out, flush the group until you hear no steam and then shoot away. This will produce good and consistent results.

If you run the brew switch after the boiler light goes out you should notice quite bit of steam and a hissing sound coming from the group.
This is more noticeable when the machine is heated for propely.
It only takes a few seconds. It might take longer or shorter depending on how long the you warm the machine and if you immediately flush water through or wait a bit till you flush the water after the light goes off.
