    Tamper size...does it matter

Hi guys, how important is it to have the exact size tamper for your portafilter? if i get one thats a few mm too small will it have a large effect on the tamping/extraction?

A few mm too small is quite a bit, and you probably will have lesser compacted coffee around the outer circumference of the basket. the water will take this path of least resistance and your centre of the basket wont extract much comparatively.

There is a fair bit of info on this forum about this (search button top right) and a recent thread which will probably answer most of your questions:

    YES it matters.

0.5mm wont make huge difference but I have while waiting for some custom Pullman tampers in the past made do with one that was 1.5mm smaller and on another machine nearly 3mm smaller with a non smooth base. Both of these were painful to impossible to get a consistent shot with regardless of technique.

I can agree with this. I am struggling with an Expobar (58mm) while using a 57mm tamper at the moment. I can get it consistent, but have to tamp VERY carefully, turn, tap, tamp again. Too much stuffing around. New baskets/tamper on the way.

It probably makes a difference; I havent had anything that was more than 0.5mm of play (comparing tamp diameter to the inside diameter of the basket), and I just take peoples word for it.

Off topic - Try doing it without tapping. I found the pour looked much better without tapping after the first tamp.

Funny things happened if I introduced the tap into my tamping process. For me, I use to do the tap to dislodge grounds that were stuck on the wall of the basket. These days, I dont do this because I found that Id consistently get a jet of espresso shooting out on an angle from the portafilter.

I believe this is one form of channeling, where water is rushing out and shooting with plenty of pressure from one specific hole in the basket. I think a lot of people on here recommend against the tap too (not too sure of their reasons though...)

Ill try this - it will become a moot point once I get the new tamper though, because there wont be any grinds left on the sides.
