    cocoa with sugar

    I would like to know is there coco power with sugar in it because with some cappuccinos *they are sweeter than others and I never add sugar to my cap.

    yes
    most brands have have sugar added to the ratio of of 2 or 3 parts sugar to 1 part cacao

    Generally all coco powder used in cafes would have sugar in it, and a significant amount. The actual % of coco used for caps is 20% and sugar is listed first in the ingredient list. You can buy higher coco % choc powder but I understand it isnt as good for dusting caps, more suited to different styles of hot choc.

    Well I dont think thats quite right. Cocoa powder is pure cocoa, but drinking chocolate has sugar in it. So it really depends if they are using cocoa or drinking chocolate for sprinkling on the caps.

    Would the sprinkle of cocoa on the top make such a difference to the overall sweetness of the drink.

    I would imagine the drink wont require sugar if it is well made, if the shot of coffee is extracted perfectly then no sugar is required. I use this as a guage at home and one of the ways i can tell my technique was correct.

    I agree that it does sweeten but it depends on how much you add (obviously). It also depends on the sweetness of the shot, no doubt.

    What is recommended in barista training? I usually add the chocolate before the milk which seems to be the method of the baristi at the cafes I usually visit.

    Something Ive never tried but how do capps dusted with cinnamon taste in comparison to chocolate? Yeah, yeah, I should give it a try I guess but is it straight cinnamon or a sugar/cinnamon mix?

    If you are going to use cinnamon, go to your local continental shop and buy "Alba" brand, from Germany. I can guarantee you wont recognise it compared to supermarket plastic.

    Use caution, one sniff and youll be addicted!

    I think it varies - some use powder some choc sauce for the base of a hot choc. Re: dusting of caps, if one is using 100% cocoa I believe the menu should state it is topped with "bitter" chocolate not sweet.

    Whilst on the topic of choc sauce, who has *a recipe? I heard 90% cocoa to 10% water + sugar I assume...? * *:-/:-?

    just hope they are not trying to cover the bitter taste in a poorly prepared shot.
