Organic @ Origin Fiefys Latte Art 2011 Blend

Gene Cafe Coffee Roaster $850 - Free Beans Free Freight
Surprised it hasnt made it here yet.

I got a bag of this from Andy now at 8 days old and it is still getting better at this stage.

Kicked off at day 3 still needed more rest but big chocolate and rich in a plunger brew, not great. As the week has gone on it is getting sweeter and starting to get berry flavours from it. Had a great Latte this morning with plenty of acid to cut through the milk and having a black plunger this afternoon which is tasting great, could do with a touch of milk.

Very worthy of getting a bag to try :)

2 weeks and the bag is coming to an end. Just had the best tasting Double shot Latte so far, might need to grab another bag and leave it a bit longer before drinking.

I got a bag of this 2 weeks ago and I totally have to agree with bf. Today I had the best tasting coffee so far 2 weeks post roast.

Firstly I must commend Andy again on his quick service. I received my coffee in SUPER QUICK TIME, 2 days post roast and 2 days after putting my order in. I have bought coffee online from many places including non CS sponsors and CS sponsors. Andy consistently gets his coffee out and to the customer the quickest. Amazing service. A credit to Andy.

Back to the coffee. Early on I found this blend very difficult to enjoy. Even at one week post roast it wasnt quite right. Now at 2 weeks its quite balanced and makes a great double shot latte.

Just out of interest, Andy at how many days post roast did Fiefy use it for competition ?

Overall a nice blend, which I can recommend if you have the patience to let it rest for a while, but not quite up to WOW standards.

Oh and by the way, my latte art is still crap, I guess nothing can help that *;D

Day 13 she used it to win the SA comp, its very gassy till day 10 and actually becomes "anti art" as the bubbles destroy the milk. *So you both nailed the rest period at 2 weeks.

From 12 days to 28 days the coffee settles and for that whole period it is amazing in milk and great as espresso. *It might standup longer than 4 weeks too but I have trouble keeping beans aside for that long to test.

:) *Wow is a very different beast. *The latte art blend was designed to produce *a very "middle" flavour profile with good body and mid acidity so a judge could never find something "outside the box" to mark as fault. *Ergo, it was always going to score 7s, 8s and 9s in sensory. *Wow has plenty of earthy/berry/cocoa flavours that are a "little out there" and make it more interesting, the risk in competition is that if 1 of the 3 judges "dont get it" then the flavour spikes can score lower as unbalanced and you get scores like 8,5,9.

What I like to drink and what I blend for competition (or commercial blends) are not always the same target.

Yep, mine too. *Every now and then Ill send Fiefy a picture of "roaster art" for a laugh. *I try and make myself feel good guessing Im a better roaster than her though.

I cant believe how much this coffee is improving with age. I am up to day 19 post roast and it keeps getting better.

I know some blends actually improve over two weeks towards a month, but that has never been my experience before with any other coffee blend.

This is the first time I have found a blend almost undrinkable (no offense Andy) in the early stages, to then develop beautifully past 2 weeks.

I can definitely appreciate it more now, than at my initial post.

It was one of the design goals too. In the world champs Fiefy flew from Adelaide to Sydney, then onto Thailand for nearly 2 weeks before flying to London. At 2.5 weeks the blend was just past its prime, it drank well and poured well but would have much rathered it at day 10.

So part of the design spec was a long resting coffee that would travel well. I played with resting a whole lot of single origin beans to find which ones stood the test of time and then developed the "mid everything" blend from that.

An interesting exercise and a good result with a little bit luck and lot of test roasts!

So WOW for now and Fiefys blend for later would suit some CSers for ordering a bit more at a time.

Tea needed for Mum and Dad and another bag of this for me to crack open New Years day coming up 8-)

Well done it now (left in nearly 2 weeks without touching) cracked the first bag yesterday for a hangover cure for me and was going well. Put it on as an Alternate Blend today and served it up at 2 weeks post roast to the customers with great feedback. A few organic sceptics that had been on the receiving end of poor ones in the past came back for seconds of this.

Rest of the second bag is reserved for me and selected recipients over the next few days ;-)

Getting down to the last few beans today from the second bag at a little over 3 weeks still great so if you are buying some prepare to wait at least 10 days and drink until 3 weeks + if it lasts that long :)

I finished my 1kg bag right on the 3 week mark and it was still beautiful. I just went back to WOW and I actually think my palate currently prefers the organic@origin.

Depending on what you are drinking the Organic cuts the milk better than the WOW by a bit. WOW as a long or short black works great.

Still just enough left for tomorrow mornings coffee 8-)

This bean develops so well over time, have about 3 doubles left from a bag roasted 18/5/11 and its not showing any signs of falling over yet. looking forward to a double ristretto tomorrow with breakfast :D

Re: Organic @ Origin Fiefys Latte Art 2011 Blend

Interesting to see the thread bumped up because i ordered some of Fiefys 2011 blend this week.

Ive long been curious about them and with a period coming up where i wont be able to roast or have time to get into cafes as regularly as normal, i wanted something that would age well and genuinely last three weeks.
It appears i may have chosen the right blend.

Im going to let it rest until day ten (perfect timing as ill be finished a couple of CoE beans about then) and then hopefully itll take me through those busy three weeks and still be solid towards the end of that period.

Cant wait to put it through the grinder.

25 days post roast and the flavour profile is starting to wane, took a video of the pour for interests sake, a tad quick, could have done with a quarter turn on the M4D. I apologise for the quality (phone) and shake hadnt had my morning coffee yet* :o

Cracked open my bag this morning, 11 days post roast.

First thing i noticed was a huge amount of sweetness, with some lovely nuttiness towards the bottom of the cup.

Ill be very excited if it keeps improving over the next week because its already excellent in the cup.

I've mostly been using Genovese beans since I've had my machine. I think I'd like to try this blend. But what do you guys prefer, this or the barista blend?
