indeed this is something that comes up ...BUT...and this is a big one...The conversation is, I have found, much better at the places with better quality coffee, and if my assertion is correct, not the overpriced ones. Also I dont recall a place with good well priced coffee that was horrible to hang around.

I think the key here is on Brunswick Street. Without wishing to sideline the thread, there were a couple of points made earlier that are relevant. First, that the wider experience (decor and a chat with the barista) may be part of the price you pay. Second, expensive locations need to be paid for. The costs of both these items are unrelated to the quality of price of the coffee component.
I think Brunswick Street ticks both boxes. You are paying for the space on Brunswick Street to sit and enjoy your coffee - the ambience is of value to most buyers and the rent is high. An extreme example would be Cafe Florian in St Marks Square in Venice - it isnt the coffee youre paying for.

If you truly feel that way it might be worth talking to someone at AASCA about it. Having said that, the best way of improving the quality of something might be to put your hand up to do it next year, if youre not doing judging already.

Or youre not prepared to sell less (and buy less) but charge a higher price. The price on bad melbourne coffee is the same as the price on good melbourne coffee.

There are no marks for using CoE coffee on a technical or sensory judges scoresheet. I can only think of one place marks for this could even be allocated. (Perhaps someone whos currently a AASCA judge could confirm this, but at the moment Im kind of offended that these kind of aspersions are being cast at a group of people I respect and plan to join)
Australian are cheap. Thats why bbbs is selling esmeralda is selling at that price. We have been selling Coe thru espresso for $2.50 because customers are not educated or too cheap.
The prices on good Melbourne coffee would be one of the cheapest in the world. Our customers demand us to be faster and cheaper than anyone in the world.
As for COE being a little overrated... I would agree, especially with the price tag vs taste.
Great cuppers and judges do say, COE is a great marketing tool to say you have great coffee.
Going to a barista comp and a competitor saying they use COE the judges automatically give extra points. I have purchased several COEs and really enjoyed some of it. My favorite coffees have been COE. However I cupped a coffee that was around 85 points last week and it was under $8 a kg. I have had coffees from farms next to COE plantations and plants that were donated by the COE farms under $6 a kg. There are plenty of great coffees around, at a great price.
Coe is a great idea and there is a place for it. It pushes the boundaries of coffee. However, no system is perfect.

well you dont know till you have paid and drank it... well mind you I could see mine going south while it was being made.
The...my point was and is that there is too much pretense in the places that sell less quality, but they proport to be quality, that is what they sell, and those that can not discern still buy it so it still persists. Those that sell better quality have less pretense and less price.
One does have the choice but unless one is at ones "home ground" then its a roll of the dice. I wont go back to any of those places, but others will so they will stay.
It also seems to becoming more common. THAT is what inspired me to start the thread.

that sir, is exactly it IMO. If you dont want to pay a higher price for your coffee dont, but accept that some people will.
A product will always find its price in any given market - premium or not.
oh, and to get back to the OP, Ive been doing some thinking and cant think of the last time I had a coffee on Brunswick street that Id pay $4 or more for. Mind you, its been a few years since Ive had the chance to explore that part of town so things may have changed.
I did get some awesome t-shirts from there last time I visited though.
Isnt the bottom line this - if you think the $4 or more coffees are worth it, you buy it and enjoy. If not you dont buy it and feel ok about that choice. In the end its choice. I find value and a nice warm feeling in many things that are not the dearest, but likewise at times I see value in the most expensive things or very near it....its all about choice. If enough people didnt want $4 or higher coffees they simply wouldnt have a market and the prices would come down or the particular bean wouldnt be bought and sold. We can choose to go to a different store or drink the dearer one...its all good.

But back to the cricket....coffee, like most everything else, will be priced according to the laws of supply and demand. And just like wine, the law of diminishing returns will apply the higher the price gets. But price and value are two very separate considerations!
Coffeehorse makes a good point regarding
people with palates that can discriminate
. Whats the point of paying for something thats beyond your ability to discern? Now here is where the law of diminishing returns again....even if you CAN discern a 10% increase in quality, is it worth paying an extra 30% in price? Perception of Value is a very personal proposition and is obviously where SlowRain and Coffeehorse diverge.
Long live robust debate....but keep the punches above the belt eh?
