  • Fingertamping - has anyone else dumped the 30lb tamp?

    A few days ago, just for a laugh, I decided to tamp with fingers instead of tamper, and if anything my distribution is better, extractions are coming out at the same speed and forming the usual straight-drop pour.

    My trusty espro tamper is now sitting in the tamping stand, alone and unloved, and Ive put on hold my plans for reg barber tampers w/ flat ripple and c-ripple bases.

    has anyone else had success with this method, or is it just a useless party trick?

    As has been stated many times... The issue of Tamp pressure is one of  Yes and NO..  

    It is about being consistent and is dependant on ya beans and the grind etc etc..

    I dont think I have used more than a few Kg in Tamp pressure for some time...  Unless the coffee is getting old and stale or I have used too course a grind... Then I compensate with my TAMPING...

    People need to realise it is not about 18g, 20g or 21g of coffee in a 58mm basket and 15kg of tamp pressure... :P

    The coffee is not consistent and unless you have a partical sizer you can only guess by feel as the the grind size...

    It is about understanding all the variables and knowing that by making adjustments across a number of things, that you have control in; you can some times get a cup of coffee nectar that is to die for..  ;D

    There is no  1 + 2 + 3 = Coffee....   It is more about 2 + 2 = 5 depending on teh exact value of the 2s

        Havent tried it but I noticed one of the baristi at Single Origin (Surry Hills) doing this once last year. He was using his thumbs as though he was operating a game controller. I wouldnt call it a party trick as he looked as though he knew what he was doing.

        Itd be hard with a hot group handle I guess.

          Not so hard - youre only tamping the coffee! Interestingly the pours are the same for me as if i were tamping, but with reduced edge focus.

              Dont see why itd be of benefit to use your fingers and, to be perfectly honest, if I saw a barista down the local doing it Id ask him to use a tamper for my coffee, please.

              AM is spot on, Ive found the whole grind thing doesnt mean squat if you dont adjust the tamp to suit. Example, I usually grind on the 9 setting of my machine and tamp moderately to get a good pour. Im doing that now, but result isnt great. I can do several things:

              Tamp harder.
              Increase dose.
              Decrease grind setting.

              They all may work, or only one may. Its not up to me

                as much as the water would kill germs, and the barista is handling the cup anyway, it would put me off a bit. might try it at home, but Im quite happy with a tamper (cleaner hands afterwards too!)

                  whats the method?
                  use them across the GH, like palm down?
                  are you making little paw prints?
                  or is it thumbs and going around and around "little tamps"?
                  what about using the meaty bit of palm near your thumb for a convex tamp.... (my palm is "meaty"....)

                    Some fecial matter can do quite well at temps just above 100C for a few min..

                    Now what was the water temp again and for how long is it exposed ??

                        to be quite honest, Id like to see either the "way off topic to anything to do with coffee" parts of this thread deleted or else the whole thread deleted.

                        distribution in the basket has almost always been done with fingers - dosing tools & credit cards are fairly new and not always ideal tools, especially if you rely on them too much.

                          sorry CH, i deleted my rubbish

                          i often distribute with my finger, just sort of chop / swipe into the sink. its simple and effective for me

                          But as you know my palate is not up to your standard.....

                          its something interesting, your a pioneer of sorts

                              thanks maheel (and thanks).

                              Guisti was only known for not tamping as far as I understand Chris, and certainly Ive never had a good cup of Grinders coffee, so unless someone can say "I had an espresso from him, and it was great, and he fingertamped", I suspect he might remain better known as a sell-out (to Coca-Cola Amatil).

                              Ill bash my old drum once again... most people have a much better palate than they think - its just lining the descriptors up with the tastes!
