Just realised Ive been updosing waaaay too much, and a naked question

I just bought a gram scale from ebay....sooo much cheaper than from the stores.

Anyway I weighed how much coffee Ive been dosing...turns out ive been getting about 10+gm per sccoop....

Which means I was dosing about 18-20gm when I was using the Rancillio basket. Now im using a 14gm synesso basket ridgeless in which im dosing 20-22gm.

Is this too much coffee (updosing too high)???? Should I cut it back a bit and tighten the grind?

Ive tried dropping it back to 14gm (horrible) and 16gm which is manageable.

This leads to my next question. I have a 21gm synesso (with ridge)...how do I dose for this? I havent pulled a good shot out of this yet! I guess I must have been updosing close to 25-30gm (with what I have been doing). Im presuming you dont want to updose much at all for a 21gm...

Im also waiting for an 18gm ridgeless....Im guessing you wouldnt updose too much on this either???

Also one more question to do with the naked handles....If I want to make 2 coffees from it....Im guessing I have to pull the shot into a small jug first, then distribute into 2 cups?? wouldnt this change the crema too much?? and be similar to using a double spout anyway?

Naked handles are good for checking distribution problems, looking for channeling, pouring it into a jug is pointless IMHO, id use the double spout, its reall only for doubles or double ristrettos, see this link for a lot of info on naked

I use my naked most of the time because I drink doubles.

If I need to split a double shot I pull out the old double spouted handle.

Otherwise would a general rule of thumb be enough grind for a level surface with the rim of the basket after updosing and levelling??

It depends on your machine. What do you use?

On my housemates VBM, you could dose quite high up in the basket (after tamping) because the shower screen doesnt protrude too far down.

KK has a measurement (in mm) of how far shy of the top of the basket to does with a Bezzera Domus Galatea. I think you need to leave more room on that machine.

The old Silvia we used to muck around on needed LOTS of room because the shower screen was very low. BUT, Ms. Silvia also loved to be updosed whereas with the VBM we needed to leave a little room or else wed get channeling.

The bottom line is that youll get the best, most reproducible shots when you dose to the "correct" level in the basket for your machine.

agreed coffee quantity is relative to shot quality - based upon the specifications and set-up of your machine

theres not much point running with oversized baskets if your coffee machine is not properly specked to cope with same - and if it is I would focus on one variable at a time, such as dose levels, and practice varying this and measure the impact upon shot quality

Id then go for grind settings and experiment with same

eliminate one variable at a time and youll soon notice a difference!

i upgraded about 2mth ago to an Expobar Minore III, so there shouldnt be any issues with updosing.
Grinder is a Mazzer Mini.
I got distribution and tamp pretty consistent now. Im even weighing the coffee to keep it constant.
Realising I have to loosen the grind settings for the 21gm. Still prefer the 14gm updosed to 21gm
