    DIT TO I might go to a few extremes to set a base line and then it is all bucket chemistry. It is about being consistent without any impost, such that whacking out a cup and the odd sink shot; is still enjoyable.

    Now if I was in the lead up to high level comp it may be different. But then a Great Barista should be able to flow with teh day and the product he is given. May take a shot or two but not much more.

    When one concentrates on all teh infinite values and measurement, it is easy to loose site of teh cup and the intent of enjoyment.

    Perfection is a Dream and the journey should be a joy to behold, not a frustrating slog.

      My father came out of hospital only yesterday after some serious heart surgery couple weeks ago and the first thing he said to me yesterday was that he badly needed a good cup of coffee........lucky for me, I invited my parents tomorrow for dinner and coffee from my new machine.
      I sure hope I can produce a good Rembrandt tomorrow !!

        Ive been weighing for the last week and doing similar to Darkfalz except that Im mostly not changing the weight, just the grind as they age.

        However as they get on a bit I find I do have to grind courser and add more beans because I cant go any finer without causing sloppy pucks and choking.

        Im not that anal either lucinda.
        Its just another way to do it, isnt hard and not much slower than my previous method.

        All in all a learning experience.

          I weighed my beans once and was pleasantly surprised to find that I got 525 grams worth and only paid for 500 grams worth 8-)
