Your experience with wine, IMO, is directly related to coffee.
Storing freshly roasted beans, completely sealed, in the fridge is going to be different to storing an opened and re-sealed packet. Think of the storage fridges for fine wines as opposed to storing a half finished bottle.
No matter what the storage medium, some chemical changes happen, some wines/beans respond well to those changes, some turn to muck.
And as with wine, the final arbiter of what you like is your palate.
