    Popper gets my vote and when you retire you can work your way to Corretto or whatever floats your boat.

    Lifes too short for stale coffee and fresh coffee is too easy ! :

    If your supplier reckons thats the go, they have no interest in coffee whatsoever....

    For mine, they can do whatever they like with it- pack it in a titanium capsule and flush it with argon gas and then install a 100 way valve which selectively vents only chosen gases. I reckon its all just marketing babble to explain away uniform(ly past peak) coffee....I guess if its all 6 months old, then it will be consistent.

    Id much prefer to drink mine fresh....whatever the biggies say!

    Fridge storage - some coffee houses in Melbourne are using wine fridges to store their beans in as you can control humidity and temp with them, not sure but I think I saw one running at 12 degrees? So they are not running them anywhere near 3 or 4 degrees like a house fridge so there is no comparison. Normal fridges are cold moist enviroments and one way valves will allow some moisture back in as well as letting gas out also they contain odours from other foods :P

    A local cafe used to store their open 3kg bags of Genovese in their normal food fridge and depending on how long their bag had been in their the coffee was rubbish. I had a quiet word in one of their barristas ears (she works for me too) coffee is now coming in 1kg bags and going in a dark cupboard. The 1/2kg bags I brought of Genovese from them were SO much better in taste.

    There was a fairly comprehensive blind test done by some Canadians I think on fridge, fresh to freezer over a fair period of time so I will see if I can find the link again. Bottom line was fresh was better but frozen if used quickly wasnt a lot worse.

    Bean taste does vary a lot depending on age and some varietals are bland and dull by week 3 and 4 while some are only getting really good by week 3. A couple of recent expensive bags I had were quite noticably not at their peak by late week 2 as a Syphon, still really nice but had lost some of the high notes while the $10 blend from Veneziano was still great as an Espresso after 3 weeks.

    "Its what is in the cup that counts" is a phrase I like, if it tastes good consistantly is the only thing that really matters and if you can buy fresh as you need it then its better I reckon

    Your experience with wine, IMO, is directly related to coffee.

    Storing freshly roasted beans, completely sealed, in the fridge is going to be different to storing an opened and re-sealed packet. Think of the storage fridges for fine wines as opposed to storing a half finished bottle.

    No matter what the storage medium, some chemical changes happen, some wines/beans respond well to those changes, some turn to muck.

    And as with wine, the final arbiter of what you like is your palate.

    is it bag to bag differences youre getting or bean to bean? will the same coffee, stored in 2 very slightly different parts of your fridge give different results? Maybe its just that some coffees are more sensitive to the way youre storing them than others.

    Thanks Rocky for the useful feedback.The part I didnt understand was why there were inconsistency on the state of the bean, when it was stored in the same place + same roasting date!Maybe It was how I placed the bean bags?laying it down flat on top of each other ie. 4x1kg bags on top of one another.....

    WSully & coffee mum - Yes, agreed. Im only a couple of years off retirement and Im saving the treat of home roasting for that. Im very happy with the coffee Im getting from my brown beans but I figure there is probably a further step-up to be achieved with home roasting. Not sure whether the palate is capable of appreciating the improvement however. I have been a wine snob for 40 years and think I reached the limit of my palate many years ago.
