just wondering at what temperature coffee is best extracted at? at the moment we have a synesso coffee machine and at the moment it is extracting at 190. is that too hot? what is optimal?

What wrong with 87.7C
Where and how is it being measured or is that what the system is set for ?
Q1: What is optimal?
A1: How long is a piece of string...
A2: Whats the output ie. whats the coffee in the cup like ?
A2: What beans are being used
Lots of variables.. There is no magic formula.
I tend to judge it by whats in the cup...

92-96 (cel) is the ballpark - but like most things there are exceptions to every rule.
But as AM said, it depends
