2 different crowds - the regular old folks who love their lavacaps, and then theres the sailors who like their stronger, properly made coffees.

That would depend on the type of boat being sailed. While I have no figures we run about 40% Lattes I reckon 25-30% Caps, 20% FWs and the rest Long or short blacks in the main plus Macs etc. Also interesting that in a holiday town with a more Melbourne based crowd in town the Espresso and long black percentage goes up compared to a more country crowd

Thanks Sully, I little chart of total sales over time on paper. Was hard to give you any more info because its just hand compiled from scraps of paper, but Im glad its got us all thinking... a fun exercise! Got me all excited to gather more data next time Im in. Worked in the kitchen tonight so no figures :< but friday night Im in again and could do a post-Easter comparison.

This is really interesting data - the majority of drinks served are cappuccino. For the Melbourne CBD it would be cappuccino and caffe latte swapped around.

Interesting stats and surprised at the number of Caps? I am thinking your customers are sitdowns mainly? And are they generally older?

Sweet! I just compiled a basic list of what was sold and when. Theres a few sales Im missing because if Im too quick making them then the cashier can bin the docket because its "not needed anymore" before I can grab it.
Ill email you what Ive got and you can play all you like. One thing Ive noticed already is that there arent as many cups with special instructions attached (9 out of 51) on a Friday, which is my regular night, as opposed to Sunday (15 out of 46), which until 2 weeks ago I never worked. My regulars have faith in me to make it how they like? Sunday nighters are just fussier? Sense of doom for impending Monday?
Anyways, anything you pick up on will be most helpful and interesting! I expect more questions raised than answered, but what sort of person doesnt enjoy questioning?

Statistical analysis of coffee
So the past 2 shifts Ive been collecting my dockets to try and get more than just an intuitive sense of what coffees Im making. Comapring the quantities of different types of drinks, sale of small vs large (only 2 options being cup and mug), value-adding (extra shots, syrups) etc.
There are two categories - what Ive rung up and made, and what someone else has rung up and Ive made. (Discovered Im the value adding queen lol... extra shot pusher).
Additionally there is a time stamp on each docket, which Ive used to create a graph of coffees made over time which is an ok way to make use of the info, but Im wondering if anyone (and I know a few of you are into playing with raw data) have other ways I might be able to look at them.
Have you ever done something similar? Was it useful or just a fun way to spend an afternoon (in a deliciously nerdy way)?
