A long time ago in a bakery far far away... ;D

Wow...heres a blast from the past and Ill tell you how I came to digging this one up.

I was thinking today (no I didnt hurt myself!  :P ) how Anger Management used to have a mate who posted here. His mates name was KM...or KualityMan as you can see by the poster here. Anyway, I was wondering how KM was doing...he wrote some great stuff as you can see if you are bothered to read back through this thread. I was just going to PM AM ( ;D) couldnt resist that one...about how KM was and then got to thinking about this thread.

So, I had a bit of a dig around the forum (as you do) and well, what do you know...way back on page 45 or something, there it was.

So, Ive done a bit of a massive bump I know... ;D

But having read it all through myself, I think that for those of you who arrived here well after this thread disappeared down the back pages, youll find it an interesting journey for a couple of us here. And yes, it pretty much confirms my Sunbeam affiliation at first too... : :P

Please, have a read, there really was some good discussion here. I have enjoyed reading back over it and thinking wow...look where I was...look where I am now...

    And now...The Next Chapter.

Im actually not long back from a meeting with the committee who organise the annual food festival in Narrabri. Its quite a big event, they get a known TV chef up, "Fast" Eddie and have their own local best bbq cook off...So I tossed out the idea of a Home Barista Brew Off and they were keen and excited to see it become part of the event.

The words that were said to me were "Sounds like well need to have a "CoffeeSnobs Corner"."

Im pretty excited myself about this...Im just hoping that I can pull it off...

All part of the journey really...

(Next step in the journey...2011 - Australian Barista Championships held in Narrabri!  ;D   8-) )

(Im about to press the post button...hoping like heck this doesnt break the forum!  ;D )
AM PM DM DMZ ZZZMMMMM Whateverrrrrr

KM is still around, however has become a product of TBQ... Thus is fighting very hard to remain focused and to see a sence and a purpose in what he is tasked with doing... But Management are not realy interested / committed... Just want teh boxes ticked...

Add in; too many projects.... A hardware business, in laws moving in, daughter coming back home... And his mad coffee mate (ME) no longer able to digest the crap and taking up a new role... To gain some level of sanity... Thus no one close to bounce some of the Quality issues around teh car park...

AT the end of the day... Retirement is the only thing that will save him... But like many; finances are not right ???

We still have some hard core sessions at Di Bella and one or two other coffee hangouts... But now that I am private and covering all of QLD... A phone call can see me of and running at a moments notice...

He can still not see why there is not a hand out "How not to use your coffee maker" etc that is available to all. He keeps think in that it could solve so many issues for first timers...

I play the nasty one... Who reads the SOPs and directives and procedures at work... No one but the Auditors... So why would the public read a handout or a link on a web page.. For one... Men only look for assistance once that have tried or broken every button... RTFM is not on their Radar.. And then the others all thing the instructions are marketing for something or restricting their creative juices...

He is Process and Quality driven and I tend to be Reality with a Quality outcome (if possible)..

However we both agree... 99.9% of people look at the symptom and put a bandage on it... Very few actually commit to a true RCA as they do not understand / are frightened or just want to tick a box... Thus the issue of Quality and the difference between preventive or preventative is lost...

However, he is still amazed that Coffee can truly demonstrate some many issues around Quality and Consistency... Thus I argue that a good Barista is like Leadership... You have it in you and it can not be taught... Management and some skills may be... But it is a personality thing...

I also argue that if coffee was so simple... Then Great coffee could be made by any one following a detailed process... However after 3 walls, he agreed that when you flow chart to processes and all the variables... It is a gift as many things have to happen and ALL teh six sences have to come into play... Any thing less and you know what happens..

Opps... Rambeling.. Long day and some crap coffee in Townsville..

PS. Qantas flight staff had a laugh when I commented at 5:30am as to their coffee as I got on the plane.... 45 min into the flight I was handed a freshly made plunger coffee, from her own private stash... It was not bad.... But the beans had been ground some time previously and thus the coffee had a staleness ... But better than nothing and she tried...

Mal, Scoots still does not consider herself a Barista, what can we do about that? Can we set some written test that shoots the theory of all that we play with? Come on Mal you have the knowledge what can we do here?
    Gday KM,

To be very honest, I seriously doubt that I could teach Scots anything on how to be a better Barista, she could without doubt teach me a load of stuff though.

I think when it comes right down to it, it is a very personal thing about how we judge our performances in the coffee making arena, whether that arena is the kitchen at home or one of the better specialist coffee establishments. When push comes to shove, Im just a hobbyist who really enjoys his hobby immensely and Scoots is a professional who is very aware of being the best at what she does and sets the bar pretty high in the process. I guess we both aim to be better at what we do in each of our circumstances but I know that I would really be struggling if we had to swap places. Me, as a PBTC pretending to be a Barista .... I dont think so.

    Mal.

Im about to give it away. My wife agrees. Ive found it too hard to master.

I make crap coffee. Now to work out what a Solis SL90 Crema and an Iberital Challenge Automatic (Doserless) grinder bought late last year is worth

Then theres the tampers, the milk jugs, the....

    Ive wasted some money. :-[

    Ron
Do not give in to the DARK Side... But if ya have no option.... I can find a home for the Iberital Challenge Automatic (Doserless) grinder and the 58.4mm Tamper :-)

Hang in there... it is worth it.

PS. KualityMan those mix of home roasted beans were not the best... Too many dark ones :-) or they were stale from sitting too long in that closed up office.

PS Can I pinch the docking station and monitor ?

    Yes Ron.
I know youve been to Di Bartoli before.
Obviously you arent on the upcoming course that Chris is presenting but you could do the next one Renzo organises with Hazel.

Dont do it Ron - youll be doomed to mediocre coffee for the rest of your life. I think I make a decent cup, though should be better after the 28/04 with more training. I agree with 2mcm Ron - it does take practice and some persisitence - unlike golf, you will produce lots of great coffee with the help of some training.

I suggest you DONT do a $100 barista course at TAFE or some other RTO - try and find a speciality roaster in your area that runs courses, or better still - get in touch with Di Bartoli and see what they have coming up. Its worth the trip and you wont look back!

Ron- you simply need some quality training.

Coffee takes time and skill and thats where many fail. You are no doubt experiencing difficulties due to inconsistency and lack of knowledge. A good trainer can rapidly fix that.

    Dont give up!  8-)

Thanks for all the encouragement guys. Its always heartening to see your kind thoughts!

My my how things have progressed since I started this thread. And yes AM is right my initial drive was to say listen to your customer. Give them what they want and success will surely follow.

Did Sunbean do this with the 6910?

Hi Scoots, its great to pop in and see that you are ploughing on and getting on with your life. This doesnt mean i dont feel for you this past year of termoil has surely been a mountain to climb. Well done.

Yes nearly a year on and who would have thought I would have learnt so much from a computer!!!!

Well in actual fact its from all of you who share your thoughts, your feelings and of course your exploits as we travel down the quality coffee road. Indeed it is all an experience.

I never thought this thread would go this long or in this direction but isnt this a testimony to those who have contributed. Its just like life, you get out more than you put in, but you have to put in inorder to gain the reward.

In AMs piece just above I have to laugh when I know he is very much a two finger typist and to type all that " charlotte des fraises" must have taken hours! Such is his devotion to the dark brown, sometimes black fluid.

Mal, Scoots still does not consider herself a Barista, what can we do about that? Can we set some written test that shoots the theory of all that we play with? Come on Mal you have the knowledge what can we do here?

I came looking for beans, alas no beans in the bay. Will need to stay awake next time.

Are you all having fun? Im up to my neck in renovations and at the current rate will need another life to finish off.

Always love to read about new business ventures, especially the "from the ground up" ones... Good luck Scoota gal, and take us off the tenterhooks when you can spill the beans.

    -Robusto
Could not have said it better.... Only make sure the beans are spilt in a controlled manner, and with the right about of gusto :-)
