    Correct me if im wrong, but id say daniel-san would have slowed down alot of his processes, particularly dosing, distributing and tamping, for the sake of the video. as its a this is my technique video, not a look how fast i can make espresso video.

    Great video. I like the attention to detail but think with refinement that it will be a quicker process.
    At the end of it all, the Coffee looked great and you said it tasted great so therefore, a job well done.

    Not a wank. With practice and refinement, these movements can be simplified in to 3 or 4 distinct and quick movements and can be all done in less than 10 seconds. Obviously the difference between a home barista and a professional barista are time pressures, skill level and machine differences.

    They are Guatemalan Huehuetenango SHB from 2009 bean bay. 8 days post roast.

    Thanks for your video that show your coffee making methods well. For your own use your method makes an excellent coffee for you. It is the taste that counts. Keep it up.

    However I wonder what effect all that banging and scraping has on the final result. To me it is largely a lot of show.

    I have seen participants in a barista comp use all this theatre to show the judges that they make more effort to make better coffee than the others.

    I can’t see what over filling the filter does other than waste coffee. If we know how much coffee it takes, the tamper is going to flatten it out and compress it to an even consistency, provided the grinder has done its job and everything else is perfect.

    In fact I have seen someone make terrible coffee following an overfill and scrape as they didn’t have everything else right.

    Has anyone made a test to see what different loading methods of coffee in the filter and banging of the filter has on the final result, everything else being equal?

    Id argue that it does both.
    As I said, tap away with impunity prior to tamping, at this stage there is no seal to break.

    Correct. So make use of the $3000 you paid for the machine and extract and steam at the same time. Time it so you have both finish roughly at the same time.

    Yes.

    Its a bad theory.

    Leaving the milk to stand while extracting the shot will allow the milk to separate.

    Good effort, and agree with some of the comments and in relationship to the above quote; Why not steam the milk before extraction? That way the espresso is not sitting as long in the cup/glass losing its freshness waiting for the milk.  
    We talk about GOD (Grinding On Demand), not fussing about with the dosing and tamper and hitting the extraction button/lever as soon as the portafilter is in the group head. So why let it sit exposed waiting for the milk?   Advice received from a Barista friend recently. Any thoughts on this theory fellow CSs?  :
