Oils on dark roasts into SC appear on the surface straight away and the volatile Oils on Dark Roasts dissipate as the beans stale. So maybe your local Charbucks are stale :
A darker roast just into SC can start forming an oily sheen on the beans (depends on the beans and actual depth) after a few days and will dissipate more slowly than the one above.
There is more to it than that but that is sort of what I have read and found with my own roasts.
