i can see that the buckets generate customers, but it doesnt teach them good habits. Why not have the display and have pre packet coffee beans in the correct storage. They see the beans and see the way you store the coffee and learn. Label the bags in the right manner so people will see, that they are getting the correct blend. I always let the customer smell the beans before they buy so they can understand how fresh coffee works.
You guys have such a great selection of coffee but i would never buy coffee that is left out. Brought coffee out of buckets too many times and been let down.
If a cafe sells Jaspers i have no problems drinking it. I actually like it. I had a poorly made jaspers coffee, however it was fresh and all the notes were there. Of course that happens to all roasters that sell coffee!! One of my favourite cafes sells Jaspers. Educating people on ethics is great, but i would never tell a customer to store coffee that way. Especially when it can taste sooooo much better storing it the right way! I think there is a easy solution to fix the problem and thats with educating the customer.

You are correct that buckets are not the ideal way to store coffee, these situations arrive through a marriage of business and practicality. If there was a cost effective suitable alternative it would be done, until such times the stores are delivered freshly roasted coffee 2 or 3 times a week to maintain the highest degree of freshness we are able to achieve. Furthermore the buckets are not full, there are bases that sit half way up the bucket giving the appearance of alot of coffee, the rest is stored underneath airtight and out of light.Originally posted by AndyL link=1152238522/15#18 date=1177239930still gotta get rid of the buckets of coffee beans. Dave thankyou for your honest and candid response. I didnt make the barista finals due to getting slammed at Wicked Sunday.
On the yirgy I am glad you have since tried it again and enjoyed it, these types of instances keep you on your toes ! The participation in the VBC for me was to broaden my view as a roaster, it can be said that you can make yourself an island if you remain on the outer. Being open to both praise and critcism equally will certainly do me no harm.

When I was talking to you and told you about the Yirg being over-roasted and really oily looking compared to the rest of the beans, I have since had a look at another batch and did buy 250 grams as my coffee supplies had gone down for that weekend. It was quite nice....definitely one of my faves.

You sound like you hit some high notes on your trip to Melbourne! As it happened, I shut up shop on Saturday, but was actually still around testing out some new machines with some Gene and Hottop roasts. It would have been nice to have seen you.
Top advice, Mal. There was some floating around at work last weekend ... random stuff like that sometimes happens ... and it was great as a French Press. Sounds to me like they roasted these way too far..... Maybe they (the roaster) dont know any better :-?

Agreed Andrew- Jasper has a an enormous amount of work to do. The coffee served at the Brunswick St flagship is some of the worst I have had in the last 20 years...and I have had some doozies....
Bottom line is do they really care or is it all about marketing high-profit feelgood stale stuff, overroasted and oily in open buckets...

i dont think its just the roasting, but more the storage. The beans have sweated out all the oils. Especially with our summer in Melbourne, Jaspers HAS TO CHANGE!!!!!!!!!!!!!!!!!!!!!!!! Forget about the fairtrade and just store the BLOODY COFFEE right.
Also didnt like Yirg. Then why sell it then? So much marketing bull crap. Just because Ethiopian sounds cool lets sell it.
Michelle you are too nice!! 6 dollars for a crap coffee is not good enough.
Mammas i have to tell my friend he is full of it. Also it is Albury.

Melbourne was again fantastic- even though I thought Id missed BeanBay (I did manage to score 500gm of JBM, which I think Ill be too scared to roast).
Maling Room was top-notch, just superb. We managed to visit three times, and the coffee was great every time! Many thanks to Andrew for not only brilliant coffee but for taking time out to chat with us, we really appreciated it.
St. Ali was also great, although we wondered if we were in the right place til we walked in the door. Really enjoyed the Rwandan they were serving Sunday, but the doppio ristretto latte on their house blend that I had Saturday was awesome!
We tried to get to First Pour but alas, we were too late on Saturday afternoon.
Also had a piccolo of Jamaica Blue Mtn at Jaspers in the Prahran Market. It was ok. A little disappointing at $6 a shot. The beans they had in buckets all looked quite oily- darker than Id usually care to go with most beans. I wonder how long they leave them sitting there for?
We also checked out coffee mamma in Albury. Looks really funky, the coffee was average. Someone should buy them a tamper so they can stop using the bit of plastic stuck to the grinder. Actually the coffee was probably ok, wed just been so spoilt all week with excellent coffee that we were perhaps a little overly critical.
Wanted to try Morrisons (?), self-proclaimed as the best coffee on the Hume, but it wasnt a good time to stop as both kids were asleep.
All in all, a good time chasing good coffee. Hoping to be back down in October...
