I bought a new breville smart grinder last week and have been very impressed with the improvement I am getting in my shots since, noticably better with a better crema but every now and then I will get one really good shot and the next one is very acidic in taste, I always do 2 at a time (one for the mrs and one for myself) and usually the second one is not as good as the first. Is there a way to tell what i am doing wrong buy the taste?

I am using a Saeco V V. I seem to think temp might have something to do with it as the Mrs sometimes comments the shot is much hotter than the last. I always use a double basket in an unpressurised PF and fill to top then double tap then fill again, double tap, even of with the side of my palm then do a firm tamp and seal. I end up with about 18 grams of coffee and always do double shots. More often than not its a good shot its just sometimes I get the occasional one that is very acidic.

Yeah, this is generally what I find when pulling back to back shots. I generally wait around 3 minutes before pulling the next one.
