Re: 7 Deadly sins of COFFEE
My 7 sins of coffee:
-Burnt coffee (obviously stay away from Charbucks)
-Oily coffee
-Sugar (IMHO, have a hot chocolate otherwise)
-Instant coffee (if that is "coffee"
-coffee inside an un-clean cup
-milk that has been boiled or not heated enough
-waiting more than 10 minutes for a coffee

Re: 7 Deadly sins of COFFEE
Id go further, I think Nestle and their ilk should not be allowed to use the word coffee, especially when the beverage is instant. I could stir a spoon of Vegemite into a cup of hot water, add milk and I recon I could fool instant drinkers and slight the Vegemite brand all at once.Originally posted by 5D6669627274070 link=1316657680/18#18 date=1316725627
I think weve missed sin #1. Thou shalt not drink instant.

Re: 7 Deadly sins of COFFEE
@mattydv - I wasnt really standing up for you (sorry). I was more concerned at how trentski was choosing to talk to a newbie on our site.
Its all cool though, since he was classy enough to apologise to the person he wrongly chastised... oh wait... no he didnt do that bit did he?

Id already read it though!
Though seriously mate, Im not concerned at all. I knew what I was talking about, just was not really with it this morning. Subsequently was typing things without putting thought into what was going onto the page.
Meh, its all water under a bridge.

Well, considering you incorrectly attributed the pre-blending comment to this user, and you appear to be telling them off for apologising about being new, I maintain it was rude and certainly not called for.

Re: 7 Deadly sins of COFFEE
Mistakenly stating as fact things that are incorrect means that the poster should do some more learning before trying to educate people.
I dont think it was rude and that wasnt my intention, it was called for though.

Rude and uncalled for.Originally posted by 2D2B3C372D2A3230590 link=1316657680/61#61 date=1317776405Given your incorrect assumptions about pre roast blending and then this gaff it might be a good time to do a bit more reading and a bit less typing
Just adding a wink at the end doesnt make it less rude.

Bitterness usually represents underextraction.
Yes, Im having a very slow day.
Underextracted=sour
Overextracted=bitter
OK, my mistake- I am very new to the forum - and to whats wrong and why. :-[ Please treat me gently
I just know I have had many bad (cafe) coffees that taste horribly bitter, burnt or just plain bad.

Pet hates- bitter overextraction and boiled milk. Oh, and poor hygiene such as not cleaning the milk wand properly or purging between uses. Yuk.

Re: 7 Deadly sins of COFFEE
I would have thought that because each bean has a largely variable roast profile, that blending them pre roast, and roasting them together, would require a roast profile that does not have the efficacy to bring out the characteristics from each origin - therefore compromise potential complexity as flavours run together.Originally posted by 6573767667656960606363060 link=1316657680/54#54 date=1317764859What makes you say that Matty?
Pre-blending will give you a different outcome and I relate it to a casserole. There, the ingredients are cooked together, not separately, and many of the flavours homogenise. As long as you use ingredients that compliment each other, it can work very well.
But on the flipside, you are right. If beans are complimentary, this would work very well. I should probably put a bit more thought into these things before I comment :
. At least I put a question mark in then, ay? :-/
Again, youre right. In saying "they cant afford it" I was (indirectly, and very badly) referring to using airtight bags solely for the sake of using them (thus a cost), rather than because the market demands it.Originally posted by 6573767667656960606363060 link=1316657680/54#54 date=1317764859I would hope the reason is because they dont see a need. If "they cant afford it" then I would wonder what the quality of the raw beans is like that they use to roast.
Back to school I go.
