  • BITTER COFFEE

    is it possible to change the bitternest of the coffee by adjusting the grinder ? does the bitternest of the coffee depends only from the type of the bean or blends or even from the weather and coffee machine ?? thanks guys for the help...

    Hi Superscooby (and welcome),

    Well, if your coffee is bitter because you have to over-extract it to get  the desired 30ml/60ml, then I guess you could blame the grind. But, assuming you have fresh beans and a clean machine (not running too hot), and clean baskets etc, it is likely the combination of grind/dosing/tamping/extracting that is causing your problem (rather than simply the grind).  Are you having problems pulling your own coffee, or do you have a series of dodgy cafes in your neighbourhood (like me) that have you frustrated?

      Hi and welcome superscooby,
      BOSW has beaten me with his post and is quite right about overextraction. It was my first thought and a common symptom when people try to get "more" coffee in the cup.

      Assuming you are trying to fix your own brews, you need to tell us about your equipment and methods. You should also search the boards here for keyword "bitter" (its top right) and see what others have to say about bitter coffee ( or strong/sour as many people describe one when they actually mean another).

      Get back to us with a little more info.

        assuming you are making espresso, how long does it take for a shot? are you making singles or doubles?

          Apparently an old trick is to put a pinch of salt into the espresso shot... (it sounds like one of those stories I remember reading as a kid, where instead of sugar, someone put salt in their coffee...)

          Though Id think that what the other guys have said would probably be more to your liking...

            Welcome to CS, SS009.

            It is common enough for people with little experience of drinking coffee to say it is "bitter", but usually it just turns out to mean that they are unacustomed to the flavour and character of coffee. Coffee is coffee is coffee, and it tastes like coffee and nothing else.

            So while there really is a meaning for "bitterness" in coffee, the term is often used by newcomers to describe the character of coffee period, and where then there may actually not be any real "bitterness" at all.

            There is no joy in spending time writing a lengthy dissertation on all the possible causes of bitterness and or how to manage bitterness when a quick reply to a specific question would probably suffice....so if you can be more specific with some background to your question, someone may be able to help.

              I recently gave a friend a bag of my espresso blend, a couple of weeks later I saw him and asked how the coffee was? He told me it was a bit bitter, I asked whether it was bitterness or a citrus-like acidity and he identified with that descriptor quite readily, he was accustomed to dark Italian style roasts where the roast profile dominates with almost no acidity and getting a lighter-roasted coffee was a bit of a surprise to his palate, not sure if I have converted him or not............. : : :-/ :-/

                Hi all,

                Im open to people criticising my coffee beans, i find its a positive experience and it gives you the opportunity to review and re-think what you are doing. Im reading a lot of stuff on here and elsewhere and have worked out with coffee everyone likes it differently and everyone tastes and likes are different.

                I too have people telling em my beans are bitter. So the best thing i can do is take it on bored and try and find a happy medium. At the moment im finding this concept with roasting beans. im not roasting them to lightly but im not roasting them to dark either. Im at a happy medium.

                  hi guys thanks for urs answers..well i ve been use this blend for over 8 month now, and sometimes is just more bitter then ever thats all i was just wondering if was me with my tamping or could also be grind and coffee machine, im using an old wega tree handle i m not very sure about the model sorry and also a grinder espresso italiano, sorry i can say that i really love coffee and im obsess with it like all of u but i ve just enterd in this world i want to learn more than i can..thanks again

                    Bitterness can result from any or all of dud roast, dud grinder setting/dose or hot machine.

                    First step it to try a different coffee. There are plenty of sugars in coffee. It need never be bitter.

                      Irrespective of your coffee (brand) supply, have you tried adjusting your grinder as your coffee ages from the day you buy a new pack, to when you are ready to buy more?

                      Coffee is not a "static" or "consistent" product (unless its stale in which case it is very "consistent") and as it ages will require judicious grinder adjustments to keep up the quality of your brews.

                        We have a (newish) 2 group Wega in our tea room. Lovely machine. We also get bitter shots every now and again.

                        This goes away when I clean it : Pull the showerscreens and have a squiz - whenever we have a morning coffee and it has a bitter edge we take 20mins and clean it!

                        Just a thought!

                            Oh no!! You mean it was just the crud??

                            I hope your showerscreen was cleaner than the ones I removed when Id been away for 6 months.. They were black and varnished inside and 99.9% blocked. We had to buy new screens - no amount of cafetto would dissolve the black "plastic"!
