On behalf of the entire Coffee Kids staff I would like to extend an invitation to anyone attending the Specialty Coffee Association trade show in Seattle, Washington next week. Folks,
A quick question. I was also at Celebrate the Bean in melbourne and watched a heat of the barista finals, cant remeber the name of the guy. Laid his own table cloth and his signature drink was presented in two earthen ware cups, the infusion I think. Anyway, as he packed the PF he leveled it off using his finger. The folks I was with thought that was against food handleing 101, thou shalt not toucheth the gear with grubby mits.
Whats the rule here? Is it ok to finger the grounds, even if it is just leveling off? Perhaps 2muchcoffee can shed some light?

I would be happy to come on board as a sponsor. Would be easy to get the judges. Maybe style the comp along the lines of the WBC. One suggestion, maybe alow a touch of alcohol to be put into the Signature beverage.

An interesting point Paul. This was the first time I had seen a barista comp, and I was quite intrigued. It looked as though it was quite a staged event - the barista looked to be saying what the things the judges expected them to say (and why wouldnt they) rather than having an in-depth knowledge of coffee from crop to cup, or as you said, why things are done the way they are. I admit this is an overwhelming generalisation, and Im sure many of the competitors do have very good knowledge - its just the way it comes across. I did have a great time though looking at the various techniques used. Some of the signature drinks seemed OK. One of the more interesting was the barista who brewed various single origins different ways – I think it was Harrar in a vacuum syphon, and a brazil in the plunger and another as espresso. This was all then mixed into a decanter and poured into large wine glasses. The idea was to try and represent coffee the same as wine. Interesting, not sure how it came accross to the judges, but it was an original approach (says he who has never been to a barista comp). I look forward to seeing another competition at some stage.
Just wait until they have barista comps on Silvias instead of the LM beasts…..that would sort out the men from the boyz.

Anyone heard of Houlihans(?) in Chatswood? I had a latte there, and it was splendid. Then I saw a sign which says Australia Barista Champion ... which year I dont know. Anyone been there before?

A problem with the barista comps is that theyre not really spectator sports. The only people who know how a competitor is going are the 4 judges that actually get to consume the drinks. Only 6 points difference? Not hardly! Ive been told those are *percentages* and at this level a difference of 4 is *huge*.
Dom (3rd place) works at Kafenio, at the northern end of cronulla mall.
Alex Kum works at the Lux (Luxe?) in the Strand arcade.
Maico Lapenna works for (I think) Piazza DOro.
Hazel owns/runs her own roastery called Coffee Alchemy
