    Just received my invoice $91 for 10kg assorted coffees from the May poll.
    Ave. hottop roast yield = 84%
    (My) Epresso machine portafilter double dose = 17g = 2 serves
    1000g* 0.84/(17/2) = 99 serves / kg green

    International roast is dearer than 10c a cup!

          Thats why were all milionaires who drive Ferarris... ;D

          Do the maths....Lets say you take 10k gross per week...Now deduct:

          25-30% food cost
          30% Staff
          Gst 9%
          Super 9%
          Workcover 3%
          Rent and Utilities 10 or so %

          Wanna swap?

            hee heee.... I can see this thread getting way off track

            I like the cafe math...

            40 seat cafe

            10 tables

            4 staff to run it (peak time)

            one person at each table

            10 people in total reading the paper for an hour (during peak trading) and drinking 1 cup of coffee each.

            The cafe take for the hour was $30... wages were $60, rent/power was $20

            bugger that!

            If you have a busy cafe with high seat turn-over then the math is good but if you create that nice place to "hang out" then it would be pretty hard to pay the bills.

              I reckon the way to go (I can see it from my pontifical armchair here . . .) is a hole-in-the-wall espresso bar in a busy location marketing itself as all about the coffee, where people can get their primo caffeine prepared to exactingly high standards through the delivery mechanism of their choice. Think heroin injecting room run by the soup nazi (but friendly). Basic food like wraps, focaccia and quality cake would be ok, but nothing requiring on the spot cooking. The set-up I have seen most resembling this is Wall 280 in St Kilda. Theyve done well with the location and demographic. They must go through 30kg - 50kg of coffee per week.

                I agree Rob.

                I came across one at Kingscross Station in Sydney that was just hole in the wall. Coffee was average but they would have sold one to every 5th person coming off and going to a train that day.

                No seats, no food (to speak of) just $2.50 for a fluffy white coffee in a foam cup.

                With the right spot, the right staff and a great product it could work well.

                  Ive always thought that a little hut at one of the rail stations (Light Rail service started here 2 years ago) would be a perfect business. Youd have high volume with no need for sit-down service. Unfortunately the Transit Authority here wont allow it.

                      What are the awards for cafe work these days?

                      Shocking that I need to ask that after going through advanced espresso but it was easier to gain a hobby rather than a career after the course, and other work popped up in its place. I suppose I still have a marketable skill there though.

                      In any case I doubt Id be still wasting time posting here or even remotely interested in the black stuff if I were making hundreds of other peoples coffees a day.

                        Its pretty low Dial, having just come out of the industry myself, i know that the last place i worked at for a short time were paying after tax $12 per hour. Talk about running a Cafe on small margins.....try paying rent and living costs off that!

                        Anyway getting back on the topic of the ‘Window’ cafe, i dont know if anyone has been near North Brighton Station here in Melbourne recently. But there is a cafe which has done a half cafe, half hole in the wall setup. They have the regular Cafe facing the street then a large hole/Window space facing the station, ‘Think Coffee drive though’.

                        There is also another one at Cheltenham station; they took over one of the old storage sheds that sat just in front of the train platform, tiny set up only a coffee machine, Grinder and Muffins. But they had the right idea; they were only open peak hour morning and evening. The rest of the day they were shut, i guess it kept overheads low and you got the prime morning evening markets.

                        As you can you can see i was a uni student with a heavy Coffee addiction, i knew all the stop off points.

                        P.s Java if you wanted to set up a Coffee Trolley, think about doing it at Universitys and Tafe’s, the only people who have bigger coffee addictions then the students are the Professors.

                          Was it Pod? I used to drink there last year, when I was minding someones house in the area.
                          I liked the place because it was a quickie coffee hit. No waiting, stand at the machine, order and drink. They used fresh coffee (Supreme) and the baristas were competent.

                            yeah, i think that is the one Rice i have only ever had a few coffees from there, And everytime i have been hungover and more worried about getting home then the quaility of the coffee.

                            Someone told me they do some good Coffee art too. so i will have to go back and cheek them out again.

                              I asked one of the baristas working at the coffeeshop here at work (Uni of Qld) how many coffees they sell. She had a look at the tilll and came back with about $2000 in coffees alone (near the end of the day). Of course production drops during holidays and between semesters. But this business seems not to be in danger of making a loss...

                              I know of another coffeeshop in Bangalow NSW that does $20000/week gross with around $10000/week profit... I recently tried the coffee there and had to spit it out.... Its so sad that a coffeeshop in a region that grows Australias most famous coffee crop (Mountain Top estate) can sell Piazza Doro crap.
