    Use real chocolate. Best for great results!!!!

    Single origin chocolate is amazing. We sampled some chocolate on sunday which was like a peaberry. Couldnt put my finger on it. I wouldnt waste my time on supermarket crap. Chocolate is like coffee guys. Chocolate needs to be at the right percentage, right roast, not past used by date, and where did the origins come from!!! If you taste Madagascar chocolate its fruitly and light. Venezuelan chocolate is full and has halzenut characteristics. We talk freshly roasted single origin coffees, lets not talk about NESTLE "evil" Give chocolate same respect because there is some amazing stuff out there!!!

      As andy says, melting down chocolate buds into a genache provides the best end result but practically speaking it is not ideal.
      Mixing cocoa is no easy challenge to get consistency and there are not that many 10/12% Alkalised dutch pressed cocoas available in less than 25kg bags on the market...  If you can find some more let me know about them!

          ^Um. Well its not very technical and Im almost embarrased to answer such a question, Thundergod... :-[

          So heres how I do it...

          Get your mug or cup (Im talking about a 200ml glass equivalent I guess). Add a rather large heaped teaspoon of chocolate powder. More or less depending on your taste really. Add a small amount of hot water and stir until powder is dissolved and you have a rather thick chocolately paste. Add your frothed or hot milk and stir whilst adding it. Viola! Hot Chocolate.

          I have heard others say that to make up hot chocolate you should froth the milk with the chocolate powder in it. Havent tried this myself to date, Im kinda dreading the mess of it as it is sticky due to the sugar in the powder. The other way means that I can froth milk for a coffee as well as a hot chocolate whilst at work doing lots of drinks!

          Okay so thats how I do it for a single serve. Would you like to know what I do for when Im catering for a large group? Well, its your lucky day, cause Im going to share this with you and you can either take it or leave it. I dont mind, Im feeling a bit generous anyway today!

          Scootas Mega Hot Chocolate...

          Get yourself a big/largish saucepan. Mine is a 10 litre pan, with a double base. Thats really important if you are making it over the camp fire!

          Now this might sound a bit off, but believe me, you can not taste the difference and Ive fed this to adults and children alike. But, get some powdered milk! Yep, you read me right! I said, Powdered Milk!

          I use half powdered milk and half real milk in this Mega Hot Chocolate. Mix up the powdered milk as per its instructions on the pack, in your big saucepan.

          Meanwhile, put 300 to 500 grams of your drinking chocolate (this is where those 1 kg bags of Belaroma come in handy! ) with some nice hot water. Pour that smooth mix into the powdered milk mix and using a large whisk, whisk it nice and thoroughly. Add as much normal milk as you want and then put it over the stove top or camp fire, whatever you have to do this, and gently heat it up. Keep stirring it so that it doesnt stick to the bottom of your pan. If it is, youve got too much heat.

          Of course, this is all to taste. If you want it more chocolate add more using the hot water/chocolate powder mix or if you want it less, add more real milk. Too easy!

          Open a bag of mashmallows and serve your Mega Hot Chocolate with a soup ladle. Kids will love you for it!!

            I dont know why youd be embarassed answering, Im the one that should be for asking.

            I do thank you very much, Ill do it that way from now on.

            I tried frothing the milk with the powder in it and it isnt a big deal to clean the steam wand but there were 3 or 4 spots of powder not quite blended when Id finished.

            Not a big deal, they were almost there; just needed a quick stir with the spoon and all was well.

            Still, your way sounds better.

              ^I dont mean any offence, Thundergod but I guess, in light of how technical things seem here at times, my simple answer to making hot chocolate seemed a bit trivial and silly to me. But its okay, I hope Ive helped a few others too with that one.

              And its good to hear someone has tried the other technique. Would be interesting to try it with having the chocolate powder dissolved in the hot water and froth it together with the milk, TG. What about trying it that way and letting me know how it goes?

                OK I will.

                As for the "simple" questions, sometimes the veterans forget what it was like starting out.
                So my asking the question was not only for me but anyone else too embarrased to ask.

                  Haighs in Adelaide do a brilliant drinking chocolate. They have outlets in Melbourne and Sydney now. Id like to try the Ernest Hillier and Max Brenner ones (David Jones stock the latter - about $20 for a relatively small tin).

                    It went well.
                    Definitely better than my first attempt where I spooned the powder into the jug of milk and then steamed.
                    Probably better than powder and hot water mixed in the mug then hot milk added and stirred. I say better in that I know its mixed the other way and if I stir the milk into the mug I cant be sure how well Ive mixed it.

                      At work we use Mocopan chocolate. Unfortunately it is packed exclusively for Maccas....a shame though, it is the right blend of chocolate and sugar, and is fantastic in mochas and hot chocolate...which is awesome with marshmallows

                      When I am lucky, and on the odd occasions I am, I get to take home a packet of this wonderful powder.

                          I tried it that way at work today, TG. Didnt get any feedback from customers yet but found it easy enough to do. To make sure I didnt waste much milk, I still put the powder and the water in the glasses we use for hot chocolate, added the milk after making sure all the choc was dissolved which I then poured back into a jug to heat up with the steam wand. Seemed to give it a nice even consistency and there wasnt really any great hassle with clean up. Which is a plus really!

                            Ive got the milk amount worked out pretty well.

                            I use a 200ml mug to serve in so I measure just over 150ml into my 300ml jug after Ive mixed the chocolate with the hot water.

                            By the time Ive stretched the milk a little it fits nicely.

                              My girlfriend has been making great hot chocolates lately using the steam wand on my espresso machine. Its pretty simple:

                              * Take some good quality dark chocolate (we used Callebaut couverture) and chop it up quite finely. We had a big block of it, so my girlfriend just shaved some off with a knife.
                              * Place the chocolate shavings in to your milk jug and pour in your milk
                              * Steam up the milk!

                              As long as the chocolate is fine enough, all (or at least most) of it should melt while youre steaming the milk, especially if you get the milk swirling around nicely.

                              On a side note, steaming milk with chocolate in it isnt going to kill my machine is it?

                                It shouldnt be a problem there Lysergic. Just be sure to do a good cleaning rinse of your steam tip afterwards, the same as you would after steaming just milk.
