Re: Turkish Coffee (How to & thoughts)

My wife is Greek and she makes it exactly as Thundergod described.
Her family tend to have it "metrios".

I like it as a change but I still prefer my coffees.

      Gday all,
I was just wondering what sort of grinder you all use to prepare the coffee? I had a go with my grinder this morning and it didnt do much at all.

I have a lovely copper ibrik that doesnt get used all that often anymore. What I do use is the el cheapo enamel one I bought a few years back.

Lovey - you need to use a super fine grind - as fine as your grinder will go.

In the middle eastern deserts it is common to froth the coffee a few times. Legends around bone fires are plentiful about how many times the coffee should be frothed and I could never understand the reason for doing that, hence will support TG on this one; once the coffee starts frothing it is ready to serve.

Thanks Ilan, it makes sense not to keep reheating it.

              Hi
I have a traditional ibrick which works fine for small quantities, I have been looking for an electric one for months.
Does anyone know where I can buy one from?

              Tried nearly all electrical places.
              thanks

Why not just buy a bigger traditional one?

It surely wouldnt be possible to instantly reduce the heat at the frothing point with an electric one.
With traditional you simply remove it from the heat source.

When I went on a Gourmet Safari walking tour around Auburn, we were shown how to make coffee at Mado cafe, employing the method described by The Goodies. It was also interesting to learn from our tour guide that most Turkish families dont bother with fresh coffee and just use the pulverised stuff that Bushells sells in the jar. In term of preperation though, I guess its just slight regional differences between the Greeks and the Turks!

off topic a little - If you ever happen to be in Auburn, visit Mado not only for  coffee but for the amazing Dondurma (ice cream) especialy the Maras flavour. Their other food is excellent as well. Ill also second earlier votes for Abla (dulwich Hill & Granville) and Ibrahim in Rockdale, they all have excellent pastries.

I used to frequent the Ablas in Granville. The pastries are to die for.

Same here re the Bushells stuff.

I will have to grind some fresh beans and compare the taste.

                          Hi all

Where can I get an Ibrik in Sydney, preferably around the city area as thats where I work (or near Thornleigh on w/end). Surely Glebe or Newtown must have places to get these things from. Not an electric one. Just a stainless steel or good quality brass (welded please, not soldered!).

Sorry to take the original post off on a tangent  :-[
Does anybody know of where to get a turkish/greek/arabic coffee grinder/mill, as well as an ibrik/cezve, preferrably online? My grinder doesnt seem to cut it (pun intended) when it comes to grinding that fine.
                              Thanks.
