    Don’t laugh...

    A well respected person in the coffee industry told me that to pour a long black you just coarsen the grind!

    His theory is that a 25 second extraction is what you should aim for regardless of volume so a coarse grind that will fill a cup in 25 seconds will produce as good a coffee as any other method.

    Therefore a ristretto would be a fine grind and a 25 second pull.

    Its an interesting idea that I’m yet to try but not one that would work well in a cafe environment easily unless you changed the tamp to get the same result.

    I am just finishing off my latest roast of that been Ray....and the crema is plentiful and long. I made a long black the other night and it was very good.

    I had a friend over tonight, she drinks long black all the time. So with approx 60 mills of non boiling water I pulled a 60 mill double shot of indian monsooned peaberry on top of it. It produced a great crema which almost lasted the duration of the drink, not only was she very impressed but so was I. It was the longest lasting non milk crema Ive ever seen, I wonder if there is a formula for it. ie. precise water temp or something else... or possibly just the peaberry quality.......

    I prefer the double shot on top of hot water.

    So many places make piss-weak swill and so hot I have to sit there for 5-10 mins before I can drink it (feel like I need to ask for an ice cube).

    PS - If someone tried to pass off plunger as a long black I wouldnt be happy.

    If its served by the cafe at the back of the Bourke St Melbourne skyscraper which houses thousands of employees of the major Australian telecommunciactions company, its bottom to 1 cm from the top of a 220ml cap. cup in 6 seconds last time I looked....

    Dont believe that this is a singularly American prerogative, Ive had plenty of brews from establishments around the country that tried to pass off dishwater as espresso,

    Thanks for all replies , I think Ill go with a shot on top of hot water as this seems to make sense . One more question , what is a tulip cup ?

    About 50ml of hot water (not boiling) in a mug, then pour the total contents of a 3 cup moka pot in. Works for me.
