  • Coffee per Kg?

    Hi all,

    For each 1Kg, how many standard cups of Latte - Cappuccino could you make?

    Roughly?

    Figure 7g per shot. Roughly 10-15% ~100-150g wastage. Around 120-130 shots per kilo.

      I would say 100 cups of coffee including wastage of "working coffee". 7g is an ideal weight of coffee per single basket, but we all know were packing at least 16 to 20 grams per double basket. Depending on the age of the coffee I am using, I pack anywhere between 18 to 20 grams in a La Marzocco handle.

        I use a Synesso 20g basket all of the time, so even though I dont measure the amount per kilo it would equate to 50 shots, converted to standard shots probably around 130ish allowing for wastage etc.

          Commercial or domestic?

          Id be hard pushed getting more than 100 coffees from a kilo.
          Lots of places use double shots for take away cups so that comes into consideration.
          Staff coffees, grind adjustment (hopefully), the occasional redo.

          In a commercial setting Id be thinking more like 80 coffees per kilo, thats just me thinking out loud, not years of experience in a commercial setting. Wheres Chris ?

            I just got thinking about how much turnover the "good" cafes pull in weekly, but i guess everyone has opinions on what is good.

            I was reading Campos go thru like 165Kg per week .... Wow!

              In thailand Framey 8-)- but correct you are- more like 80...

              I worry when people ask how many per kilo. It often implies that its all about the buck. For me, its usually a guarantee of bad coffee.

                80 coffees per kilo is about right allowing for wastage but the best way to find this out is to do it for yourself. Likewise if this question is in regard to operating a successful cafe - you need to know the answer to these sort of questions before you get started.

                  Non-commercial:
                  I use an LM double basket, 20g IIRC last time I measured.
                  So that would be 50 doubles or about 100 singles.
                  I wouldnt put my wastage any higher than 10%.
                  That would mean about 90 singles/kg I think.

                    165kg/week at Campos

                    Even at my more conservative 80 coffee/kg 165 x 80 = 13200 coffees a week
                                                               
                    Campos (Sydney) are open 54 hours a week so, 13200 / 54 = 244 per hour on average.

                    Thats 4 coffees every minute of the day, all day, six days a week.

                    Campos do have an operation in Brisbane now, so maybe combined wet and dry coffee sales in both locations could add up to 165kg maybe...

                    Then there are wholesale accounts.

                      There was a guy on another site who works at Melbourne Uni, he was sure he made 650 cups per day, using a 40 sec extraction.

                      The poor guy must have been a Blurrrrr!


                      Take sage advice from another CSer and try it yourself, see how many you get from a Kg.

                      Like Chris says, once the stats and stories flow its a bit hard to see the wood for the trees. If your looking from that angle your always going to get a different answer.

                          Any barista worth their salt will be wasting 200gms of that kg through the day altering the grind & tasting extractions, to ensure optimal shots for their customers.
