    ahhh the elusive consistent cup of coffee, your post gave me a better understanding AngerManagement
    we would go to one cafe and there was one girl that could nail our coffees, eventually another was just as good and then there would be times we would walk to the door and see who was on the machine and walk right back out and go to GJs

    the owner loved getting feedback from us and she was shocked to learn when we told her one night that the coffee was inconsistent depending on who was behind the machine because according to her they all made the coffee the same way

    i currently drink more black tea than coffee so yep im used to it being hot

        I am the barista at a very way out of the city cafe....about six hundred kilometres out of the city. And I have been told by my customers that the coffee is the best in the North West...

        Personally...I dont believe it is hard. You just have to know where to go and where not to.

        Honestly, a discerning Coffeesnob should be able to see the warning signs from about a kilometre away...dont you think guys? ;D

            so here is a question for you all, do you rock up to a cafe and tell them exactly what you want or do you leave them to their own devices and see how passionate they are with making coffee ?
            like i would think the first part of the equation is if your ordering a coffee it should taste like coffee and not some milky dishwater arrangement >

              Nar, its easy....I make a decision as I walk in the door. See a crappy pour, milk crud, massive milk jugs, full doser, or stale import coffee branding and thats a message not to bother...

                well see 2muchcoffeeman i am still not at that stage at being able to spot the warning signs but its funny you know i went for a coffee with the g/f on Saturday to a place that has coffee that tastes like coffee but could be a tad hotter and on my way out hahaha (yeah yeah i should of checked on the way in lol ) whilst paying the bill i did have a bit of a look at his gear so i am learning slowly
                the grinder was pretty messy and there was ground coffee all over the bench and generally didnt look to clean at all around the machine

                  Yep, what 2mcm said, Banjo...

                  You can spot them a mile away...the first thing that might alert you to decent coffee is the smell...the second is the equipment...the third is the person behind it. If none of those things add up...just walk away or buy a bottle of water...;D

                      Hi Banjo, Im assuming that you havent got hold of your own great grinder and good machine yet... once you do you wont be blissfully  :P buying cafe coffee in Newcastle any more Im afraid. Tis the truth. I live here too.

                      Also when you get your machine, grab a 1kg batch of the Brown BeanBay Espresso Wow (available from this website - see panel at left) and use it to calibrate your grinder and get used to your machine and distribution/tamping methods. It has such a great crema that its easy to spot the changes in flow/blonding, and a wonderful complete flavour. You may find, as others have, that it then becomes a benchmark against which other blends, and cafes, are rated in your mind.

                      You may like to bench-test machines in the Silvia price bracket (Ive read your other posts) including the grinders youre looking at too - Di Bartoli in Sydney can help you out like they did with me. Absolutely worth the visit just to see the machines in action under your hands, plus Di Bartoli give you free training on-the-spot too when you buy your machine.

                      And Ill echo the indicators of poor cafes mentioned above... easy to spot once you start looking. The easiest indicator in Newcastle is the beans - ask them who their roaster is before ordering your coffee.

                        well i havent got into the habit of peering over the counter as yet but went for a coffee today, now i had a choice between a cafe or a little bakehouse, thought i would take on the cafe thinking fresher/better coffee
                        i didnt use my eyes today but i did sit there and listen, they werent overly busy coffee wise, the first thing i heard was the doser being used, but hang on a minute i didnt hear the grinder :-?
                        now obviously im now sitting there telling the g/f all this, next thing i heard was the knockbox getting a workout
                        i didnt hold out much hope of getting a very nice coffee and 9 bucks later for 2 coffees i was right

                        oh dear, still havent got a machine as yet but will i ever be able to visit a cafe after i get one :-/

                        i have a few other dramas going on at the moment so just holding off on the purchase of my gear at the moment

                          Just out of curiousity... what is considered good barista practice when grinding for a continuous stream of customers? I never took too much notice but the other day I was sitting in one of those coffee franchises with my wife and noticed no sign of any grinder noise for at least 25 minutes. Then the girl ground almost the entire contents of a large commercial hopper until the doser was full. Is this pretty standard? My beans usually go from just being ground to sitting in a shot glass in less than a minute.

                            Yep, thats pretty standard. Not right though is it? I guess someone behind the counter has nothing to do so decides to grind an hours worth of coffee.

                            I can understand it though when a cafe is flat out and switches from grinding on demand to auto cut out so that they can get the coffees out. Not ideal but practical. You might also notice that they resort to using bigger milk jugs. And with a stream of customers system is critical. Even then, with the number of coffees being made it still only takes minutes to go through an entire doser full of coffee.

                              had another poor quality coffee at the cafe in the new area of the hospital, stood back and watched from the side, had one girl grinding/dosing/tamping/shots and another steaming the milk
                              so im there watching the girl dosing, not much care taken and next thing i see her hold the porter filter up to what i can only imagine is a part on the grinder for tamping, from what i could see she was only applying enough pressure to flattening the top at best ?

                              what gives there then ?

                              well another disgusting cafe coffee, im slowly working my way through the duds lol
