      Hi Jon, Im also in SA and have been drinking plenty of iced coffee of late.

      I find iced coffee is the only variation of coffee in which I need some sweetner.

      I keep it very simple:

      1. Pour shot
      2. Stir a teaspoon of coffee in shot
      3. Pour over a tall, ice-filled glass
      4. Top up with milk

      To make it a little more sophisticated you can add a scoop of ice cream, a bit of whipped cream on top of that and then sprinkle with chocolate.

        Is that whole beans or grind - cause I know youre not suggesting we use instant :P

          That would have to mean shot - as in shot glasss - as in shot of rum or some other liquor!

            We make ours like this...

            1. Half a squirt of vanilla
            2. Scoop of icecream
            3. Shot of fresh espresso
            4. Milk
            5. Top with fresh whipped cream (we have a creamer - the type that uses the little nitrogen cartridges)
            6. Dust with drinking choc powder.

            Its served in a tall milkshake glass. Pretty NSW traditional iced coffee Id say.

              I have heard it is preferbale to pour the shot over the ice, not ice onto shot of espresso...not sure of the significance in this

                Ive been having a few iced coffees lately too. Like CJunky i make a very simple iced coffee:

                Pour shot, add half tsp of sugar or honey (i prefer honey), mix, add two or three ice cubes and then milk. Thats it.

                I love the real-coffee ness taste of this simple version.

                  Nothing is more smooth and thirst quenching then a cold brew as the base for your iced coffee.

                  - Youll want a coffee:filtered water ratio of 1:6
                  - Youll want the fresh coffee grounded quite coarse
                  - COMBINE THE WATER AND COFFEE IN A CONTAINER WITH SOME JAPANESE ANIMATION sound effects! GATTAI!
                  - Sit back, let it chill over night.
                  - The next day, using a fine strainer, strain the brew into another container and ta-dah! Cold brew coffee.
                  - Using two cap fulls per glass of milk
                  - Add icecream and chocolate powder on top (optional)

                  and last but not least..

                  - Expect that customer to come back the next day, so make another batch for at least 30+ customers.

                    Thanks everyone for sharing these recipes, so many ways of making the most out of our beans   During summer I drink a type of caffè freddo or iced espresso and cant go back to anything else as Im not really a milk person. A simple recipe I picked up overseas thats sipped slowly and enjoyed, not gulped down.  ;D

                    Basically pour a double shot into a s/steel shaker that has 3 decent sized ice cubes and a tsp of sugar. Shake it till the ice melts then pour into a glass and throw an extra ice cube in the glass.
                    Its a type of cold espresso. The melted ice cools it and gives it a bit more volume, refreshing and full of flavour. Just had one after work today using Aceh Gajah Mountain beans  8-)

                      I do things a little bit different.

                      First off I use drip coffee from either a chemex or swiss gold dripper (or CP if I have made a batch), pour the coffee into a cocktail shaker add a drop of vanilla essence and a dash of cream and shake until cold - pour into a glass and top with cold milk.

                        At my cafe we use a blender

                        Cover the blades with ice (cubes preferred)

                        Cover the ice with milk

                        Add three shots of espresso

                        Blend until smooth

                        And pour into a milkshake cup - add a straw

                        For sweetness we add a squirt of homemade chocolate syrup (optional)

                        And theyre *&%$# good - sold 30 on Sunday!

                          Do you feel that using fresh espresso shots gives a bit more unf then a cold brewed coffee method? If so, is that a good unf in comparison?

                            all I know is that it tastes good and the coffee maintains its body which means that it colours up nicely as well and Im sure that the freshness helps ;D

                                Any of the recipes above, or mine:

                                Two doppio ristrettos
                                70 ml milk
                                8 small ice cubes (about 115 grams)
                                (15 ml cream and 5 ml each of vanilla and Irish Mist--or--25 ml Irish Cream Dream ice cream)
                                sugar to taste
                                Blend until slushy.

                                Drink until throat hurts.
