    Havent really finished playing with this one yet Art, so used a profile Ive used before on a Djima a few years back as these beans appeared remarkably similar in appearance and size. Anyway, took things slowly towards Rolling First Crack (RFC) which occurred at just on 14:30 minutes, backed off the heat such that the first few snaps of Second Crack were noted at approx. 19:00 minutes. Left the heat on for a little while longer until the snaps became more regular then removed. Left the beans coasting along like this for another 20-30 seconds then dumped and cooled.

    Normally, I would leave the roast about 5-7 days to degas and develop properly so was very pleasantly surprised to discover that the flavours had developed so much after only 3 days rest. Just goes to show....
    Dont think Ill change anything with the profile for the next batch I roast but I will leave them rest for a little longer and see what difference (if any) that this makes. Cuts through milk really well too if you like the odd Latte or Cappa.

      I cant say I have a favorite yet - I havent tried them all

      But I found the Ethiopian Gambella and Guji exceptional at CS9/10. I also like Peru Grace Villa and Malawi Mzuzu. Sulawesi Rante Kapua Torojah however is probably my favorite until I try a better one (Mud Cake in a cup).

        I share Mals enthusiasm for the Ethiopia Sidamo Guji - its a flavour that really hits you, especially 3-7 days after roast which is when I like it best. Its great after that too, just less berry and more chocolate I think (but I could be wrong as my palate is still on L plates).  So far my roast profile has matched Mals closely, except Ive been ending it promptly at first sign of SC ... but i can feel more experimenting coming on.
