    I asked for a double shot yesterday and they said that their standard offering is a double shot ristretto anyways, so would I like that doubled? HELL YES.

    It was so good, i was suckling the spout of the takeaway trying to get the last drops before wed even left the suburb. I asked if we could circle back to get another and was shot down

    I think a triple shot does sound yummy but Ive never had a triple basket to try making it all at once with.

    Sorry I havent been back to this thread.

    On my first attempt with the triple basket I decided I might ned to coursen the grind a little first.
    My mistake.
    The basket has more holes. Duh! Shot ran a bit fast.

    Second attempt, back to original grind setting, shot still ran a bit fast but looked a little under dosed (compared to my double basket up dosing).
    Still ran a bit fast.
    (Forgot to weigh the beans.)

    Next attempt will be up dosed a little and I hope to remember to weigh the dose.

    I understand what you mean about getting 60ml from a double, I am getting closer I think, I have been playing with a finer grind and a lower dose and I seem to be improving the volume of good extraction I am getting. It is also more consistent.

    I have a Synesso double basket and yes it takes 21gms dry weight, as I have gone to the trouble of weighing it on jewelry scales (as you do), but most shots I pull are 30ml unless I want a little more for a slightly larger flat white cup then its 45ml

    No, actually, I dont use the single basket at all. And I dont think that I can get a good 60 ml from a double basket either, as much as I have tried...so, there is either something wrong with my technique or its not possible...

    What I see is a good 30ml and then an average 30 ml if I run 60ml through the double. What I want is two good 30ml, so hence why I do two separate shots.

    Scoota, interesting that you consider that the single basket is superior to the double. I find the opposite and I never actually use the single as I find it too variable, do I need to work on my technique?

    Yep, same here moto...give em what they want is generally what we do too. But, I have had the pleasure over the years of establishing myself here as the maker of the best coffee around and so most people are willing then to go that step further with me and try something different. Hence why we now have a second grinder and offer up different coffee to our regular blend.

    I take the opinion that "Its not what I call coffee but if that is what the customer likes then thats what I make" I would love to be in a cafe environment and be able to offer those drinkers different blends so they could discover a coffee that they actually like.

    Were the same, though our "small" is the 12oz. I only sell 8oz at functions (for good reasons not needed to be explained here.)

    I too dont understand the urge for that massive drink but we do go through more large than small. And Ive even noticed that when we get to the end of the frequent buyers card, they generally ask for the large.

    Honestly, I think that people out our way, dont want a stronger coffee by having a larger cup, rather I think that they just think that they are getting better value. (that is proved too when they ask for "not strong"!) Either that, or its better on their conscience when they go and dump half a dozen sugars into the drink! : One of the drinks that has me scratching my head is the very very weak latte with vanilla syrup in the 16oz cup...go figure that one!

    If they want strong, I find that I will get asked for a double shot in a smaller cup. Which if I think that theyre serious, I will do two separate single shots, rather than just run 60mls through the double basket, thats to ensure quality at my end.

    Im going to try the triple basket with tomorrows breakfast coffee.
    Ill weigh the dose and time the shot and see what I get.

    Ive been pulling ristrettos though, so it will be a bit of a guess.
    If Its not close enough I may adjust and try again for my arvo shot.

    Surely with such a high dose you have to up the extraction pressure to pour freely (say 9 to 10 bar), unless the grind is coarser than usual, but with a HX would this mean higher temps burning the top layer of grind?

    As others have hinted at, any consumer wanting a bucket of coffee doesnt care about the taste, but just something with caffeine to energise their blood-stream plus the milk in their tumm to tie them over until joining the queue at Maccas.

    HCK, I agree ... whats the point with a triple shot? A ristretto of 20ml poured in a 15 to 20 second time-frame gives the goods, in terms of taste.

    If I were to contemplate a 90ml pour, it would be from a 16gm basket double pf packed to 20+ grams, extracted to 40-45ml. Then done again ... separately with fresh pf & grind

    Combine it, then texture your milk.

    Yep HCK, for quality, go for standard size baskets, but triple your time for triple the result.

    I hear you beanflying I have never understood the urge for the massive drink but I sell more 16oz than 8 oz. People want "value" and they see the big one and think great more coffee. I also have the problem that I only have one shot at each customer per day so they cant come back for the second small one.

    As for weighing the puck, havent done it for a while but I was getting around 19-20g in them. Sounds like I am just dealing with a simple old double I was going off the coffee parts definition of a triple basket (21g)
