Just like picking first colour out your way..
Bloody farmersWhen its hard going i.e. first colour - ya paid by the bin / container / Box etc (depends on what ya picking)..
Later in the season - stripping time, ya get paid by the Hr.
But I always loved the ability to eat fresh produce first thing of a morning... Spoilt me for life... Shorts / 3 shirts and a hat, the sun coming up, the crunch of a frost under foot and a rich dark Blood plumb or peach etc etc etc.. Then that gram of a bloody cold metal ladder

If you go up the URL you will find directories for the proceedings for many conferences.
The list is under http://www.nt.ntnu.no/users/skoge/prost/proceedings/
To find PDF files or HTML files there that are to do with coffee use Googles "site" specification.
Just enter this into Google
coffee site:http://www.nt.ntnu.no/users/skoge/prost/proceedings/
and it will search for the word coffee in all of those proceedings. About 89 results but that includes the "Coffee Break" during their conference :-)
There are however many other papers there that cover coffee related things.

Is The professional barista's handbook by Scott Rao the best reference on coffee or is there a better one available?
