  • Cafe coffee cool too often

    Id be interested to know (a) how frequently others are experiencing this problem, and (b) what you tend to do about it if you do.

    To clarify:  I frequently find that coffee in cafes is served too cool.  These days this seems to happen more often that not. I am located in Perth, but found the problem if anything even worse in Melbourne (which I have seen as a more coffee-conscious city than Perth traditionally) on a recent visit.

    Is it just me, or are others feeling that this is more frequent than it used to be?

    And, when this happens, how do people respond without getting up the nose of the barrista and risking unwelcome additions to the replacement cup - or am I just being paranoid?

    From a behind the bar point of view, every now and then Ill get the occasional request for a HOT coffee. An I have no problem bringing the milk to the limit for them; however, if they dont ask, then I wont know. On average, I tend to not push the milk too far past what I believe is optimal temperature for milk as my cups are pre-heated quite nicely.

    I personally wouldnt feel cut if you asked for it to be hotter than youve gotten it, whether from another shop or my own. Each customer is different, and expecting them to be all lemmings would see a loss for me. Speak up, just be civil.

      Ive not experienced it here, but I dont drink out very often.
      The one place I buy from on Optus campus occasionally makes it a smidge too hot.

        Come on up to Newy, where the default way to serve coffee is boiled. And every (7th? roughly) customer requests it that way.

        I suppose youd deal with too cold the way I deal with too hot - size up the person making the coffee and if they dont look like theyre already having a cruddy day ask them nicely to remake it.

        Heating milk more or less isnt a great strain - the request is perfectly reasonable and one made often by many more people than just you, so Im sure it would be fine.

          I get it in my home cafe, my son likes it just right, my wife likes it scalding her lips off, my daugher in-between, the son in an ACF cup, the wife in a ceramic mug where I cant see the shot pouring properly and the requests go on--full milk, skim milk, no milk--its all good fun but a little taxing on the poor old barista (moi!!) at times!!;D ;D ;D ;D

            If you dont want to ask for it hot, you could look out for some tell tale indicators which should guarentee you a scolding coffee.
            Screeming milk; milk bubbling over side of pitcher when barista stems it; and from my experience also, service stations also serve up a extra hot latte for weary drivers.

              Im never offended by a custamer requesting there coffee hot as it happens a bit where i am .. otherwise i try to get it around the mid to high 60s and a little hotter for take aways.

              What does drive me up the wall is people who have a preference for hot coffee but dont specify this when ordering leading to me to remake the the order.

              If you like hot coffee just ask for it.. you wont get drawn and quartered

                Which unfortunately happens more often than I would like, Ive contemplated having a big neon sign proclaiming a latte is more enjoyable when the milk isnt on the same level as lava.

                    Personally, I dont have a problem with the temps coffee is served at in the cafes I go to. Very occasionally it might be a bit hot and if so and it was detrimental to the flavour, I will politely mention it.

                    My father is one who likes his coffee very hot and always asks for it to be prepared in this way. Increasingly, he tells me storys of how many cafes and coffee carts will come back to him and say we can do that but do you know it will probably taste better if we dont make it very hot. His response is usually something to the effect "I know, thats what my son always says, but can I have it very hot anyway?" In the end he gets it served how he likes it ....

                      The few times I have had coffee in Melbourne over last few years I would say I think most were served at around the optimum temp of 60-65C.  Over here in Tassie we still have some places wanting to serve drinks too hot, (for those of us who dont have asbestos lined mouths) but many are now serving their lattes cappas, etc at around the optimum temp, although most seem happy to accommodate anyone who orders their drink hot
                      As noted above if you like it hotter than is now common, best to ask when ordering, but dont expect the hot drink to be standard any more,
                      for lots of reasons.

                        This has all been great discussion, and reassuring that generally, so long as appropriate politeness is used (naturally!) a customer shouldnt get a hostile reception to a specific request. The temperature Im less happy about is what might honestly be described as luke warm, and this is what I have been getting quite frequently. Im certainly not a fan of scalding hot coffee - I want to be able to drink it comfortably without having to wait for it to cool even slightly - but I think in a few places Im going to need to ask for it to be made "a bit warmer than usual, please", or something like that. Trial and error I guess.

                          Id like to know what is hot and what isnt for a customer. I use a digital thermometer, no I have never just used my hand to feel the heat, I love the accuracy of the thermometer too much. So, I like to go to 60 degrees for most of my coffee, if hot is asked for Ill push it up to the 67- 70 degree mark.

                          Are cooler drinks being served because people are just relying on their hands? (I think weve had this discussion around here before too, check out the milk forum.)

                          Really, Id love to be able to go into any great cafe and say Id like my drink to be 55 degrees (because that is the temp that I like to drink my coffee), but seeing as theyre not using thermometers so much and are just relying on their hands, Ill be betting that my drink would never come to me at that temp.

                          Personally, I wont be at all surprised to see OH & S hit cafes in the face with the fact that they are going to have to go back to using a temperature device that is slightly more accurate than the human hand. Or ear for that matter...

                            Just remember there is always LAG in the transfer of heat...

                            I often stop as the temp approaches 60 and depending on the volume / the Milk and the machine the temp can still keep rising another 5 - 8C with ease... Thus some may take to to the high side and still think the milk is OK... When in fact it has been scalded..

                            Watched a person the other day with a digital probe and they stooped it at about 65... But before they poured I asked them to put the thermometer back in... The look on their face said it all..

                            PS. After 3 goes I got the coffee, the way I wanted it...

                            PPS. They could not grasp the concept and even swapped probes as they thought it was out of cal..

                              No, Im fully aware that the temp still keeps rising, AM...thats why I do stop at 60 because I know that it might still be heading up to 65, which as I understand it, is still in the acceptable limits.

                              The more I think on this one...

                              I have had a lot of grey nomads coming through town of late and they are the ones who most commonly ask for it "hot". Mainly because I think that what theyre getting on the coast is the hand temp method and its not hot enough for them. So, I have just done it to my usual temp and Im yet to get a complaint that its not hot enough. I also usually tell them as I hand over the coffee..."Please let me know if its hot enough or not, as your hot and my hot are often different!" I mostly get a smile and a "it will be ok" back from the customer...Its all in the delivery I think really...
