    I live in Cairns and have had some beans stored for over a year. They have not gone moldy yet. They are stored in the Coffee Snob calico bags in the pantry. If they dont go moldy here then I doubt they will go moldy anywhere. (Currently about 10Kg in stock. :-/ :-/ Maybe I need some more.

    At the time of that poll i think i only had around 20kgs from memory. That was back in my modded popper days but since purchasing my Hottop and impulse buying a Behmor i seem to have developed a green been collecting problem ;D

    Us northern NSW snobs meet every Monday night at the Mark Bs roasting house for a good yarn and often a few caffainated beverages too. Most nights i restrict myself to a kilo or 5 but 2 weeks ago i went nuts and bought a whole heap of Monsoon Mallabah, Zambian Terranova, Costa Rican Los Anonos and Indo Blue Batak....just couldnt help myself with all MArks new coffees

    The week prior i went on a mad search for some of the Ethiopian Sidamo Guji that was stocked in Beanbay after Andy "ran out". My boss caught wind of this and took it apon himself to get me a large present delivered with the next coffee order. Unfortunately it was a Grade 2 washed Sidamo unlike the unwashed ungraded Guji i got from Andy. The next day Andy came to the rescue with some Guji he found in the bottom of a bag...lucky me ended up with 10kgs of it and ill take another 10 if Andy ever can get his hands on it.

    So there you have it...

    Not as uncommon as you might think MeP....

    Ive had some thought on this recently also having compiled a 100+ kilo stock pile at home.

    Most of it resides in either calico bags or paper bags sitting in the bottom of my cupboard but i do have a little bit still in plastic bags.

    I came across some cake cooling wire tray last week at a commercial kitchen equipment place and will be going back to get a few. That way the beans are well ventilated on all sides which i assume would be better than sitting them on the bottom of the cupboard right?

    OK. Out of the bucket they come, and into the pantry. Ill try to replace the mesh bags with cotton ASAP.

    I think newcastle is a little more humid than sydney in general, but definitely not as humid as monsoonal india ;-). Looked on weatherzone and we averaged 77%rh over the last week (readings at 0900 and 1500 each day).

    Silica gel = bad
    I expect that silica gel will remove the wanted (13% odd) water from the beans and stop them from roasting well.

    Cotton = good
    All CoffeeSnobs beans (except the small starter packs) are delivered in natural cotton bags which is about the best storage method for these volumes. Cool, dark and dry (like your pantry) is a good spot.

    Concrete = bad
    Store them directly on concrete (anywhere) and they will mold.

    To make them a little better - they need to be sprayed with salt water and stored in oak..


    Maybe a job for some one... Any sea dogs out there...

    Old wooden schooner and over loaded with beans in the wet season...

    Ya could get top $$$ And charge CS members a cheep rate to crew for you... Relive the total experience.. I would be up for it... 8-)

    A good volume could be managed and the $$ profit margin would out strip any of that so called animal coffee ;D

    Is Newcastle any more humid than Sydney?

    I havent had a bean go mouldy over the last three years and all my beans sit in either the Coffee Snobs calico bags, the odd paper bag and one 60kg lot in the hessian bag they came in.
