    Dairy Farmers has a "Lite White" product that caters for all crowds and its not skim milk, rather its the low fat product.

    Id suggest just buying it as opposed to having several different types as your full cream drinkers wont tell the difference and your skim milk drinkers will be just as happy when you tell them you have that milk on offer.

    But otherwise, just take some skim and when you run out, well, you run out.

    Having said that, when weve done "coffee cart" or away functions, I usually slip in a few containers of skim as you always get asked for it.

    Ultimately though, what will determine what you take is cost and profit. Low fat and skim milk are more expensive than normal milk and if youre charging the same price for those drinks, then youre going to see that affect your margins. Something for you to think about...

        Yeah the cost thing I find a laugh as the milk companies can use the extra milk fats saved for other products so it must be one of the more profitable sides of their production. Your right most drinkers wouldnt notice the difference like most wouldnt notice me serving them Harris preground either

        Decisions made, thanks all. No Decaff. Full cream 70%, Low Fat 25% and 5% skinny. Soy if it looks like we need it but not offered on the menu. As I can tweak it every day or top up from the Supermarket it is not like going out into the sticks for a job.

          I run a coffee cart business around metro Melbourne I have found with our bigger events we do 2/3 full cream and 1/3 skinny. I would also suggested if you like making money with minimal effort you should stock soy milk and decafe And charge a extra 50c for both I just get long life from safeway and if you dont use it all you will just have it saved for next time.

            Washup sort of. 3 days over we did over 100 litres of milk. We ran out at roughly 25% Low Fat (2%) and 5% Soy.

            Didnt do Skinny milk and anyone who asked seemed fine with low fat as an option.

            Started with no soy but had a few conversations with Soy drinkers on day one and they came back a few times over the weekend as we went and got some. I guess it is worth carrying a little and the shelf life is good so next time round we will carry a little.

            Finished up getting a 1kg bag of Espresso WOW from Andy, apart from doing some freeby Espresso shots to doubters of Decaff tasting good (and it does   ), Decaff sales under 1%, result is not worth the effort I suppose but the people that brought them were happy being able to get one. Might be I get some more green and use my own 250g roasts of Decaf ?

            Also interesting I offered $2 espresso shots as singles or doubles. No figures on these as I served them in Ceramics but I reckon 50ish over the 3 days. So 5% ish of sales as Espressos

            Approaching 10% I think sales of Hot Chocs, offered both CS cocoas, kids adults in the mix, great $$ and very happy customers. Double Dutch by a wide margin. This is still with mild temps and a daytime only crowd.

            Satisfying too quick look at the boxes of left over cups and there is more left over tubes of 12 oz than 8 oz. Seems that you can do without Jumbos.

                Ah...pretty much as I predicted!

                Great to hear your first run went so well, BF...thanks for the update, cant wait to hear how Easter goes for you! Which no doubt will definitely be cooler!

                  Only problem with your business now is that its not near me ;D

                  Would love to have a squizz at that Izzo as well as all of those flying toys! Will be a couple of years before I would get the opportunity to make the trip though.

                    Yep 100 litres of milk 15 kg of beans No worries now  : Easter will be a breeze 2-3 kg a day

                    Minor mention too used Sugar in bowls Raw and White rather than straws to save on the mess and those pesky packets blowing away in the wind. Also a cost saver.

                    I also used Biopak Compostable double walled Cups, Lids and Spoons. So everything except coffee bags and milk containers is off to the local compost facility this week  8-) No real taste issues and all corn starch based plastics makes for a good selling point I reckon. Small price penalty to pay at this stage.

                    Reduced back to the Pavoni and Syphons for a few weeks now  :-?

                      In the market stall i run, for every 15 litres of fat milk, I would do 3 litres of skinny. I use Coles homebrand "whole" and YL Coles Lite.

                      Lite is brilliant to work with, stretches beautifully and textures so nicely!

                      Decaf - would do maybe 2 per day out of 300 odd cups.

                      One of the big events I did, we moved out 6kgs beans, 150 litres of milk and did 3 decafs - all in around 5 hours!

                      The portofino kept up - - just!
