coffee bean from Peru.... with medium body taste.

Slightly off topic, but hopefully still helpful

I recommend you contact the Local Council - Boroondara Health Dept. and make a time for an Environmental Health Officer to visit your potential place of set up, they will come out for free and help you with cafe equipment requirements, by that I mean how many sinks you may need etc.

You will also need Food Safety Supervisor training and a food safety program for your cafe before you can operate/register as a food shop.

The water authority for the area, South East Water(?)  will also require a Food and Oil interceptor (Grease Trap) for the shop, which the council will require to be installed in the back yard etc.

Opening a cafe is more than putting in a few benches, tables and chairs and a coffee machine with fancy named beans then selling 100 cups of coffee a day...it is a massive payment of money for something that could, most possibly, a lot of the time fail.

    Good luck!
    Great information ,

I will definitely check with local council about anything, a friend also
suggests that they usually keep a list of reputatable food supplier.
It will worth to talk to them

Just complete the Food Hygiene Lvl 1 & 2..

I will definitely check if they vendor has installed an Oil Interceptor.
I plan to buy an existing business now.

    Has anyone
tried Home Barista Institute bean before? Or drink their coffee ?
I suggest you try it yourself.
If you dont like it why would you serve it to your customers?
Yes, I try their coffee many times including expresso, Latte ,
    Piccolo and Cappuccino....etc.

I would say Home Barista is a premium coffee bean.
Perhaps you should also try their current spresso which should be even better than the Ex! ;D

Waiting 72 to hours for machine breakdown service is not good enough and its not something id expect youd encounter with Veneziano or Five Senses, cant comment on the other 2 youve mentioned.

However, when you say waiting for 72 hours do you mean for someone to look at the machine or for it to be fixed?
Sometimes parts arent always available so there can be a delay but a good coffee company will loan you a spare machine in an emergency.

As for a La Marzocco needing too much maintenance, we have several and they are very reliable, all machines have issues and need regular maintenance.

    Eric,

Have you worked in a cafe before? No good plonking down 50, 100, 150 thousand dollars to set up a cafe which is essentially buying a job but with strings attached, only to find that you actually dislike the work.

Recently, I just attend a café start up course at Home Barista Institute in Melbourne. They seem to have a good system.

Two or three important factors must be considered..

1: Do you want to own a Coffee concern - Buy an existing one

2: Do you want to manage and run a coffee place - Buy and or start from scratch

3: Do you want the "recognition" as a top brista - Get some real experience.

Remember just doing training (even at the best places) does not always mean you are a great barista or have the personality and stamina to do the work..

If ya want all three; then with out the background and any existing recognition in the industry - little steps and take ya time or it will just be an expensive pipe dream. There is a lot more to a good coffee place other than Fresh beans, shiny machines and a Barista certificate. Just look at all the Auction places...

eric - at the risk of sounding naive - you need to KNOW the answers to these questions before you start posting them in a public forum!

no one will want to supply you if you start bandying around remarks about their product online

the best people to speak to are the roasters themselves as they can answer your questions about coffee directly

and forgive my saying so but given your apparent lack of expertise I agree that PAYING someone independent for some commercial advice might be a GOOD idea

save your questions about suppliers products for the suppliers themselves - and if you think that an expobar rental is in the same category as owning a Synesso, well... all I can say is that theyre two completely different machines and scenarios!

Has anyone bought coffee from any of the Home Barista Cafe ?

They seem to use  100% Organic Arabic fron Peru as their house blend.
    Very unusual house blend?!

Probably not the best place to look for info on starting up a cafe, this is primarily a home coffee users forum (with some input from industry). I think the best bet is to continue paying for advice rather than trying to get some for free  . (cause you get what you pay for !!!)
Thank you for the advices , moto coffee

I just want to seek advices from people who has experienced with
different coffee suppliers. Were they happy with them before?
    Veneziano, Five Sense, ....etc

Can you refer any of the good consultants in Melbourne?
