    I recently returned from a trip to Vietnam where i drank a lot of their local brew with lashings of sweetened condensed milk. I bought a few bags of coffee home with me and im now doing some research to find out if the information i got there was actually correct.

    Is there any truth to the business of weasel coffee? Im sure youve all heard the myth. Im a non believer but my girlfriend refuses to accept its just legend.

    Where i bought the coffee the seller told me the beans were roasted in butter, is this possible? They had two distinctly different styles and one did have a wonderfully buttery smell.

    How long can i keep a butter roasted bean before the flavour starts deteriorating?

    I realise these may be low brow questions to more enlightened coffee beans but you have to start somewhere right?

    Hi Bretty, and welcome.

    Vietnamese beans are predominantly robusta, and they probably roast them in butter to taste a bit palatable because theyre not as smooth as higher grade arabica.

    As for shelf-life because of the butter factor :-/ - good question!

    2 weeks is the standard snob belief in life for roasted beans, but admitedly Ive never roasted beans in butter and compared longevity.

    My thoughts are that butter has a low burning temp, and so you might have in your stash nice smelling popcorn but not great beans - by nature, and short roasting time.

    As for weasel coffee, didnt know Vietnam had Luwaks. Might be hype.

    How did you get it through customs BTW? ;D

      While in Vietnam the tourist guide told me that the weasel coffee isnt real.
      He said that the coffee went through a "non animal" process that is supposed to emulate the "kopi luwak".

        YES...

        Same goes for lots of other places that also promote "kopi luwak"..

        There is "kopi luwak" and there is the Fake "kopi luwak"...

        And while people like to brag, try something different, follow the moves (bucket list) etc then  fake "kopi luwak" will always bring in $$$ for some one.

        PS. Trying to get over there with my wife for a few weeks..

          Im off to Vietnam in june, was going to Thailand but silly red shirt protesters changed that > so backpacking in Vietnam for honeymoon it is, were happier about that anyway

          To be honest, not holding much hope for Vietnamese coffee :-[

          And im not into butter roasted coffee ;Dewwwwww!

            Thanks for the info Grindondemand, much appreciated. I was surprised by the flavour of the robusta knowing that its not well regarded in coffeedom. Im thinking now that the condensed milk must have been masking any shortcomings in the bean. That said, ive been trying different grinds in the little filters that i brought back and it tastes pretty good for that style of coffee.

            Two weeks you say, i better get drinking i suppose.


            I didnt have any trouble bringing the coffee through customs. The offical told me that as they were already roasted they didnt pose a threat. I had 3 kgs with me and he didnt bat any eyelid.

                Bretty, no worries mate.

                How are you grinding your butter beans for the filter? Using a plunger/French Press?

                Coarse means steeping for awhile, while fine means a bit of sludge at the end, but a stronger brew in the end.

                Onya for bringing back those beans, but I reckon theyre low grade compared to what you can get on bean-bay.

                Keep them, and mix at 10% with arabica at 90%.

                  Yeah it was one of those olfactory-memory purchases. The type where each time you smell the coffee it transports you back there.

                  I have a Mazzer grinder, i think the model is mini man??

                  I won a Faema e98 s1 compact coffee machine in a writing competition a few years back and the grinder came with it. Ive never used the coffee machine as i have nowhere to put it in my apartment (kitchen is ridiculously small), its sitting in the wardrobe at my mums place waiting for some love.

                  The grinder is excellent though, i never knew how much difference grinding to order would make.

                  Does the course/fine principle work for stove tops as well? We have an atomic which i cant seem to get a good coffee out of and not sure what im doing wrong. It always seems to come out bitter and watery.

                    In HCMC (Saigon) I spotted, far off in the distance, a FB80 La Marzocco  machine. AWESOME!! Hurriedly walk over. A overhead shade was covering the brand...... Gloria Jeans. Buggggaaarrrr!
                    It was bad.

                    The only good... er ok coffee I had there was at Espressamente Illy Cafe.
                    It was from a strange looking place a bit like a Mercedes car show room.
                    The address: 38 Ly Tu Trong st, District 1, HCMC.

                    They had a shiny brand new La Cimbali and a mahlkonig K30 grinder.

                    There is another Illy in HCMC but I didnt go to it.

                      I was in Vietnam last July and it was really hot and humid then.  I would recommend making the trip up to Sapa even though it is quite out of the way, and my wife and I really enjoyed our stay in Hoi An.  If youre in Hanoi, try to make a trip up to Bobby Chinns restaurant - great food and the prices are very reasonable.

                        kinda out of the blue with this one, but have been in vietnam for about 7 weeks now. Just went on a tour the other day, and the guide said the weasel coffee is made using caged animals so they can make sure they collect all the beans. dont know how true that is. And have also seen the butter roasted coffee beans here, and Id assume its using a form of ghee as that would have a higher temperature threshold.
                        BTW, espresso here is a massive fail, but I am thoroughly addicted to the iced coffee! With or without condensed milk, its pretty damn good. Ive bought some beans (roasted very, very dark as they all are) and I have my aeropress and kyocera with me so Im going to compare that with the little metal filter things they use here. Will post up the results at some stage...

                          Late on this - was doing google on Vietnamese coffee saw this thread. FYI Vietnam is the largest producer of Robusta beans in the world and have made significant improvements in the quality and flavour of the beans. (they want to make money and can only do this with quality beans) (I dont want to go into the whole arabica vs robusta debate) 8-)Espresso as a style in Vietnam is a challenge - local Vietnamese dont usually use this so you are much better to go with a phin where a coarser grind is used with no rush or pressure this still gives great flavour with good quality beans - There are probably 3 main integrated producers in Vietnam - Viet Coffee, Trung Nguyen and Highlands - all are available in Aus - Highland has their range with Western Palates in mind with the other two having more traditonal styles as well as some with a Western bent. The "butter" roast beans will keep for at least 2 years as long as the original packaging is sound. I dont like the bitter styles (they have their place and can be produced with pushing more water through the beans at a higher temperature), and I love the nutty/moka aromatics of vietnamese coffee.

                            And that would be part of the reason that few CSers would even consider them. No roast coffee will be worth drinking at 2 years post roast, regardless of how its packed.

                            So sorry, but Ill pass....

                              i have a vietnamese coffee down at Geelong at a little restaurant each afternoon, kills anything i get from a barrista made joint (except 7grms)
