Getting back on topic have recently introduced mandatory tamping for all coffees at my work, and a 30 / 30 pour (30ml in 30 sec), and the difference to the quality of our coffees has been outstanding!
Were generating a much richer, thicker, and more flavoursome espresso, and already customers are asking:
"Have you changed your coffee?"
And, despite my initial protestations, the manual tamping process takes no longer to do, than using the less effective mounted tamper, which is attached to the grinder, and provides a more even, compact, and polished tamp, resulting in noticeably superior extraction.
Some experts say tamping is overrated when it comes to a good extraction. But assuming that is not the case, and tamping is indeed, as most of us agree, crucial... then it beats me how lifting a portafilter to the stationary tamper under the grinder, and exerting no force whatsoever, does the required job.
I might be missing something here, when manual tamp was being referred to I was picturing just using a normal tamper (such as me with my Pullman tamper). But from the way Grendel was talking now I am picturing the pull down tamper stand such as the one from coffeeparts.com Tampers
Or maybe it was an inside joke and I am way off track now.

Nope, well just assume that neither you nor Grendel have ever watched Fawlty Towers. If you had youd have understood the "Manuel" reference, and if Grendel had seen it hed have understood that having Manuel tamp his coffee is probably the worst possible thing he could do. :P
Back on topic, put the tamper at the back of the wardrobe, go searching for a jumper/shirt/something you "have" to wear, and find the tamper while youre looking. "Hey darling remember this, I got it years ago and couldnt use it. Wonder if it will still work....."

Dont worry, I thought manuel was a spelling error! So were stupid together! ;D
