I was lucky enough to visit Dennis at CuppaCoffee today and the blend he was running through the LM was delightful. Ive always enjoyed Dennis coffees but this was another level.
Shortly after, Dennis served me a ristretto shot of the same blend which was really interesting - quite different (as you would expect from a ristretto), but delicious. It lost a little bit of viscosity, but had incredible sweetness and complexity. After we had discussed the shot, he told me it had been brewed at 3bar! Dennis is lucky enough to be working on one of a handful of paddle La Marzocco Lineas which allows the adjustment of preinfusion (3bar). But the whole shot was brewed at 3bar! Dennis has never been afraid to try different things - and this is something that has returned some very interesting results.
