    Ive come across cafes extracting their shots at 3 bar, but in those cases it wasnt experimentation by an experienced barista, it was the result of the pump failing many months before, and the staff not even noticing the difference!

    how long did the shot take to pour? (30ml in 30s?)
    was a grind / tamp adjustment made to do the shot?

    Thanks for the kind words bjeck, and though not surprised there have been no responses, I do find it disappointing.

    As an apprentice there came a day when I broke an expensive piece of material while trying a radical new way in the manufacturing process. Of course, I had to front up to the boss and tell him what Id done.

    Rather than chastise me, his response was, "If you dont crack an egg, you cant make an omelette".

    I feel sorry for everyone who does what everyone else does, because its the way everyone else does it...just dont leave me in charge of a chemistry set! ;D

    I was lucky enough to visit Dennis at CuppaCoffee today and the blend he was running through the LM was delightful. Ive always enjoyed Dennis coffees but this was another level.

    Shortly after, Dennis served me a ristretto shot of the same blend which was really interesting - quite different (as you would expect from a ristretto), but delicious. It lost a little bit of viscosity, but had incredible sweetness and complexity. After we had discussed the shot, he told me it had been brewed at 3bar! Dennis is lucky enough to be working on one of a handful of paddle La Marzocco Lineas which allows the adjustment of preinfusion (3bar). But the whole shot was brewed at 3bar! Dennis has never been afraid to try different things - and this is something that has returned some very interesting results.

    Just wondering if anyone has ever tried/tasted something like this?
