Hahahaha I was referring to liking savory as appossed to sweet in all foods!

Salt in espresso.... The mind boggles at the idea.
Had a friend who always added salt to coffee, his family had migrated from Hungary after the Second World War, he said it was a family thing, his mother always added salt, perhaps to do with war time scarcity of food. :-?
PS just found some interesting info on salt in coffee, will start a separate thread.

A light sprinkle (not a spoonful) of salt masks bitterness better than sugar ever will.

I really am not a sweet tooth, so I only have sugar in my mud at work (nescamud 43)  I cant stand sugar in espresso or late or cappuccino as I think I just dont like sugar....

I however much prefer raw sugar to any other for the taste, white I dont hate but prefer raw over it any day.
I really despise artificial sweeteners .... the leave a horrible taste in my mouth that lingers for hours....

CSR Logicane - supposedly a low GI sugar. (Hype maybe ?  :-/ ) Has a fawn colour. Not sure if it imparts a flavour to be honest, dont use that much, and only in particular style coffees.

I dislike any sugar that imparts a flavour to my coffee i.e. raw, brown, palm sugar etc.
My preference is for refined white.

Im a big fan of using Panella sugar cane extract. Worth heading over to a health food shop and getting a small bag to give it a try, although I had a really hard time trying to find it.

The taste it gives is very suttle and doesnt ruin the coffee. Ive tried all sugars and find this to be the best IMHO. A little tip for you, of you take 2 white sugars then 1 Panella is enough. Ive found its just over half the dose/amount you would generally be used to.

Using plain old white sugar at the moment, as it does not impart so much flavour to the coffee. Used CSR Brown sugar for a very long time but I slowly worked out that I was masking some of the flavour in my coffee with the molasses.
Did try two boxes of Billingtons Light Muscovado, which was a more interesting flavour compared to CSR. Just hard to get out in the country.

White sugar dissolves faster. A friend of mine will not use raw sugar simply because it cools the shot faster than white sugar.
Smaller grain sizes dissolve faster but so will stirring. Undissolved solids usually means the solution is approaching saturation. Brown and raw sugar are considered sweeter by many because of the molasses content. Dont know if thats true though. I dont have a cast iron mouth or throat so cooler is cool by me.

I once overheard a barista tell a customer that raw sugar was proven to be healthier than white. He went on to tell her (paraphrasing now) that city-folk using refined white sugar got fat but cane farmers ate raw sugar and didnt get fat. True story!

I ask him if he thought the long days of manual labour might have something to do with it. (After I got my coffee.)

He also obviously never met some of the cane-cockies I know.

    Raw. Dont use much though.
My grandfather worked in a sugarmill when I was a kid (and most of his life actually). Hed get huge sacks for next to nothing. We grew up on it. My octagenarian Mum will use honey if she cant get raw sugar.
