Youll find that you get a slightly different effect if you let the first few drops of coffee go to the drip tray, as well as shortening the pour at the end. I like it that way, but probably a matter of personal taste.

John at Costa Noosa does a Quad ristretto for me when I ask nicely. he also recommends which beans are closest to peaking as well.

I would add that for a ristretto fining the grind and increasing the dose is also a good idea, to get a slower extraction with concentrated sugars
I work on 10 to 15ml for a single ristretto and a 20 to 25ml extraction for a double

Hey thanks peoples, will have a look at those websites. When I buy my machine combo I will see if they can throw in a naked porta-filter with a tripple basket. I already have some favourite local roasters that I currently use. Fiori Esspresso Blend and Yallingup Smooth French are two of my favourites!

A ristretto shot is distinguished from a standard shot by a relatively shorter pour time and smaller volume. Hi Andrew,
Bit of a yes to most of your questions, and add "the right fresh bean (for your taste)" to the list, like maybe Espresso Wow from beanbay, or even a bag from your favourite cafe. But IMO, a ristretto could be done on any basket. (edit: and by "any", I dont mean a single, although Im sure some of the snobs here can make a pretty mean ristretto with that, too).
Have a look at the home-barista site for excellent tutorials like "Espresso 101" and " Barista Technique: Good Extraction, Good Espresso". Theres a pretty nifty graph there if youre into the techie side of stuff.

My favorite cafes make what I believe is a double or tripple ristretto shot depending on the size of the cup topped up with milk. Its my favourite way to drink coffee. It tastes rich, syrupy, chocolate & caramel thats sweet and no hints of bitterness.
Currently just researching a machine grinder combo to buy as well. So thought I would ask, what do I need to do/get to achieve similar results? Do I need a triple basket? Finer grind? And I believe less time on the pour of the shot?
